Notes: Made this once before and it was fantastic. Trying to get better water treatment with Campden tablets and using Fermaid O versus part of an old "Propper Seltzer" nutrient pack. This first batch brewed very cold, mainly spending time in a 55F house. This new batch will be 72-75F, so we will see what changed!
Brewed 7/23
Steeped 1 cup of dried hibiscus flowers in boiling water (flameout) for 20 min. Added 9 lbs of honey as it was cooling.
On 8/5 I added 3lb Oregon tart cherry puree, with the plan that I will rack to secondary around 8/20.
Plan is to leave in secondary for ~3 months and bottle.

Notes: Fermented upstairs, 3/8, avg temp 66F. Actual OG 1.044. Excellent crown, good steady fermentation. Racked to secondary in basement on 3/15, SG appeared to be 1.012. Very cloudy. Going to allow clarification and then drop in the lagering rod and put it in the blanket. Am not using the modified carboy for this activity with the blow-off hole; concerns about contamination based on recent problems.
Change of plans: No lagering. Still some action day two of secondary. Keeping in basement, app 55F.
Bottled 3/23. Secondary was showing signs of mold floating on top so did not rest as long as I'd have liked. Tasted great at bottling. |

Notes: Before adding the fresh apricots to the secondary ferment, pasteurize them to avoid contaminating the brew. according to American Homebrewers Association (https://www.homebrewersassociation.org/how-to-brew/how-to-add-fruit-to-beer/):
"First, mash or pulse-blend the fruit to release the juices and create more surface area for the beer to be in contact with the fruit. Now you have three options for pasteurization. First, is a low-heat pasteurization method that you can do in a double boiler or carefully directly on heat. Hold the mashed fruit at around 150-170°F for about 15 minutes, and that should rid the fruit of most of the unwanted bacteria. Second, simply freezing the mashed fruit before adding it to the fermenter. It is said that freezing and thawing fruit a few times helps release more flavors by breaking down cell walls, which means a fruitier brew!" |
