Notes: I used Philip's home grown Cascade hops for the flameout and dry hops. No idea what the AA is for those hops, but we shall see how they perform. All other ingredients were purchased from Northern Brewers. I did not want to chance ruining the liquid yeast during shipment from MN to MD, so I substituted Safale S-04. It's not a great match for the recommended Wyeast 1187 (Ringwood) or the other recommended yeast White labs WLP-005 (British Ale)...but it will have to do! |

1. Put 1 gallon of water in your kettle.
2. Put all 6 pounds of DME into the water. Stir frequently to reduce the chance of clumping.
3. Proceed to steep the grains for 25 minutes at 152 degrees.
4. I pour the last two gallons remaining over the grains into the kettle. I typically do room temp water, but you can heat your water up.
5. Bring to a boil. Add 60m hop addition.
6. Add half whirfloc tablet at 15m.
7. Add 5m hop addition.
8. Remove kettle from heat. Let it naturally cool to 180 degrees.
9. Once the wort gets to 180, drop in the flame out hop additions for 25 minutes.
10. Cool and top off with water to 5 gallons. Pitch yeast. Ferment at 66 degrees. |

Notes: This is a very nice drinking ale. Ready to bottle or keg in 8 to 10 days but I always follow 1wk primary, 2wks secondary,(you must let the yeast finish and this is where the beer becomes crystal clear) then keg or bottle....If you bottle, let it sit for 2 to 3 weeks minimum. It will be worth the wait! also used 1 whole Whirfloc tablet. All my friends loved this one. Be careful! this stuff will sneak up on you! Prime with 4oz. priming sugar as usual. |

Notes: My homebrew shop was out of the regular American Ale so I used American Ale II and I was happy with the results.
For the orange I just sanitized the orange, took the skin off to get me 1 oz and threw it in with my Irish Moss.
It sat in my primary then I siphoned to condition for three weeks.
Kegged it at 8.2 and after 5 days it tastes great! It's a little more pale than a typical American IPA, but it's very drinkable--which is what I was going for. |

Notes: I wanted to brew something that was quick to make, refreshing and sessionable!
Instructions:
Steep the crystal malt in a grain bag in the water as it is coming up to a boil. When the temperature reaches 170F, take the bag out. Add the extract before the wort comes to a boil to help avoid a boil over. When the wort begins to boil, add hop additions at times above. Only boil wort for 15 minutes. Chill and pitch yeast.
One note: you will not need as much water as a typical one-hour boil, since you will not be losing as much water to boil off. |
