Notes: I would bulk ferment for about a month before touching it. Ginger and lemon juice slows the fermentation process down incredibly.
An alternative method is to bottle before it's finished at 1.011 and then pasteurize. |

Notes: I steeped the grains in 5L of water at 67 degrees Celsius for 30mins. After that I added the DME and brought to the boil.
The first hop addition went in once boiling started then 45mins later the second addition was added for 15mins.
The LME was added to the fermenter then the hot wort was poured on top. Cold water was added to the fermenter to top up to 20L.
Yeast was added at 16 degrees celsius.
Fermented for two and a half weeks due to me being away for work reasons. |

Hit slightly above 160° for steep slightly longer at 50 minutes. Mashed out” at 155° with great color!
Re lit the fire and brought to a boil, added extract and mittelfrüher.
Added extract and bittering hops before boil.
Knockout and chill. Slightly over time. Took about 30 minutes to chill. Really need a new chilling system.
Gravity off target at 1.034
I am not sure why my gravities are always low.
Did not read the instructions on the yeast. Did not sanitize the packet, did not break the nutrient. We will see if fermentation starts and goes. Worst case I get another packet of yeast and actually follow the instructions.
12 hours in, no fermentation yet. Optimal temp and dark conditions. Will update this evening.
Fermentation started about 36 to 40 hours after pitching and is very vigorous. Topped off the airlock.
Checked AM, krausen filled the airlock. Sanitized a new airlock and swapped out. Fermentation still going strong.
Issues with carboy bung created the lack of a tight airlock. Transfered to secondary ~1 week and 2 days after strong fermentation. Good sediment in primary fermenter, and falvor target is on. Did not notice any off flavors from the makeshift cling wrap seal that was necessary to the top of the carboy (after two bungs went for a swim). Gravity measured in line w/ final predicted gravity.
Small amount of fermentation was present in secondary after adding 1.5 pounds of frozen & warmed blueberries. this occured within 12 hours. Placed in moslin bag for secondary.
Will check gravity in a week and re-taste, but predict that this will be a good summer beer just over 4% when finished.
*Changes for next time: I would have added 3.3 pounds of Munic LME that I had on hand, and a second packet of yeast.
Update 6/16: gravity checked in at 1.0 putting alcohol somewhere around 4.85%. Faint berry taste but not overly strong. Nor overtly blueberry. Should drink a lot like a raddler. Will keg on 6/20. |

1) Use the Bavarian Wheat DME to make a 100g/1L starter for the Omega lacto blend 24-48 hours before brewday. No stir plate, put on an airlock and just leave it alone. Anywhere between 70-90f is fine.
2) Brewday - heat 6gal water to 200f, add DME and stir until its all dissolved. Thats it! Cool the batch down to 90f, rack to fermenter and pitch 1L lacto starter.
*Very Important - you need to be very careful not to oxygenate the wort or this could ruin the beer. To limit oxygen exposure use a smaller fermenter, or up the batch size, so that the fermenter is filled completely full leaving only about an inch of headspace between the wort and airlock. OYL605 doesn't krausen so don't be worried.
3) Leave fermenter in the 70-90f range for 24-72 hours, depending on how sour a beer you want. You can do this to taste if you'd like. Once sourness has been achieved, rack back to the kettle and pasteurize for 30mins at 180f.
4) Cool, pitch plenty of healthy yeast, and proceed like any other beer. At this point you can oxygenate the wort before pitching your yeast if you'd like. Thats all there is to it you'll shortly have an easy going Berliner to drink!! |
