Notes: This is one I find myself going to every trip to Honolulu. So, stuck at home due to COVID-19, I decided to brew my own. I emailed Honolulu Beer Works and asked if they would share the recipe.
I received an aloha e-mail from Roxayne, Director, Brewing Operations and Brewer, giving me the necessary information and several important brewing tips.
Since the recipe they use is for 7 barrels (about 220 gallons or 44 five gallon batches) of beer at-a-time, she and I could only guess-timate the amount of toasted coconut to use for a 5 gallon batch. - NOTE: The PRIMING SUGAR requirement. May have to recalculate based on the temperature of the beer at bottling!!
- Post-boil calculation was 1.0 gallons. We measured it as 1.75 gallons. That caused the IBUs to increase from 4 to about 10.
- Measured OG was 1.045...may have had more than 5.0 gallons in fermentor. Adjusting volume to 5.3 gives an OG of 1.045 and ABV of 4.9% vs. 5.2% with an FG of 1.008. Check this on bottling day!! |

| Notes: Steep Grains in 2 gallons of 160F water for 20 minutes. Remove without squeezing. Bring water to boil and add malt extracts. Bring to a boil, add bittering hops, and continue boiling for 60 minutes. Remove from heat, add finishing hops, and cover brewpot. Cool to 70F, then transfer to brew bucket. Add ~3 gallons of water to make 5 gallons total. Take O.G. reading, then pitch yeast. Transfer to secondary after 3-7 days, Clarify on secondary for 7 days or more, prime and bottle. |

Procedure:
Start with 2.5 gal tap water, add grain to cold water and heat water to 165 degrees, and steep grains for 30 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 6lbs Liquid Gold Malt Extract and boil for 60 minutes
Add .2oz of Chinook, Centennial, Columbus, Cascade, Calypso, Cluster, and Citra hops and boil for 60 minutes
Add .2oz of Chinook, Centennial, Columbus, Cascade, Calypso, Cluster and Citra hops and boil for 30 minutes
Remove pot from heat and add 1lb of Amber DME, return to boil
Add .1oz of Chinook, Centennial, Columbus, Cascade, Calypso, Cluster, and Citra hops and boil for 15 minutes
Add .1oz of Chinook, Centennial, Columbus, Cascade, Calypso, Cluster, and Citra hops and boil for 5 minutes
Cool wort to 70 degrees
Add enough bottled water to bring the specific gravity to 1.058
Add Safale US-05 Dry Ale Yeast
Fermentation:
Primary – 2 weeks at 65-70 degrees
Secondary – 4 weeks at 65-70 degrees
Add .2oz of Chinook, Centennial, Columbus, Cascade, Calypso, Cluster, and Citra hops 10 days prior to bottling day
