Notes: Gently steep about 1 gallon of apple juice with 1.5 tsp Pectic Enzyme, Yeast Nutrient, and 4 oz of raw honey for about 5 minutes. Let sit for 45 min to cool and allow pectic Enzyme to dissolve.
Drain canned pineapple (add to hop sacks?) and add pineapple and juices to primary. Combine step 1 ingredients after waiting 45 minutes. Add yeast.
At least a week before bottling/kegging, add ¼ teaspoon potassium metabisulfite per 5 gallons and ½ teaspoon potassium sorbate per gallon to prevent re- fermentation.
Rack to secondary after fermentation process. Rack to secondary and allow to settle. Transfer to keg and taste. Sweeten with lactose to taste (non-fermentable) and then carbonate. |

| Notes: First rendition of this hazy DIPA. OG came out much lower than expected due to a volume boil error, added 2lbs of table sugar to reach desired gravity. Even with recipe juggling and added sugar came out very drinkable. Nice hop aroma, good body and very juicy. Color was a little darker than desired due to use of liquid extract. V02 of this recipe will be all-grain, more oats and no sugar additions. |

| Notes: Steep Grains in 2 gallons of 160F water for 20 minutes. Remove without squeezing. Bring water to boil and add malt extracts. Bring to a boil, add bittering hops, and continue boiling for 60 minutes. Remove from heat, add finishing hops, and cover brewpot. Cool to 70F, then transfer to brew bucket. Add ~3 gallons of water to make 5 gallons total. Take O.G. reading, then pitch yeast. Transfer to secondary after 3-7 days, Clarify on secondary for 7 days or more, prime and bottle. |

1oz Chinook Hops
1oz Centennial Hops

1 Safale US-05 Dry Ale Yeast
Procedure:
Start with 2.5 gal tap water, add grain to cold water and heat water to 165 degrees, and steep grains for 30 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 6lbs Liquid Gold Malt Extract and boil for 60 minutes
Add .2oz of Chinook, Centennial, Columbus, Cascade, Calypso, Cluster, and Citra hops and boil for 60 minutes
Add .2oz of Chinook, Centennial, Columbus, Cascade, Calypso, Cluster and Citra hops and boil for 30 minutes
Remove pot from heat and add 1lb of Amber DME, return to boil
Add .1oz of Chinook, Centennial, Columbus, Cascade, Calypso, Cluster, and Citra hops and boil for 15 minutes
Add .1oz of Chinook, Centennial, Columbus, Cascade, Calypso, Cluster, and Citra hops and boil for 5 minutes
Cool wort to 70 degrees
Add enough bottled water to bring the specific gravity to 1.058
Add Safale US-05 Dry Ale Yeast
Fermentation:
Primary – 2 weeks at 65-70 degrees
Secondary – 4 weeks at 65-70 degrees
