Style: American India Pale Ale
ABV: 6.5% ABV
IBU: 60 IBU
Malt: Two Row Pale, Light Munich
Hops: Columbus, Cascade, Centennial
Availability: Year-round
Formats: Draft, 12oz. cans, 12oz. & 22oz. bottles
Big Daddy IPA is a hop-head's delight, a generously dry-hopped yet surprisingly drinkable American-style India Pale Ale. Poured into a standard American pint glass, the beer is a golden straw color, with tight carbonation and a slightly off-white head that leaves a lovely lacing. The aroma is floral, fresh grass, pine needles, grapefruit, and some subtle notes of fresh bread.
Steeping grains:
Steep grains at 66-70 for 45 mins. Not expecting much conversion... it's mainly for body, flavour, freshness, colour and head retention. |

Notes: Add 2 tsp of Gypsum to water, based off starting with DC water.
The recipe released from the White House has an error, they mention 1.5 oz of Fuggle in the list of ingredients, but then only 0.5 oz in the instructions. I went with 1.5 oz here.
The instructions are also a little weird in terms of the boil times. They say 'add the honey and boil for 5 more minutes'. So, actually it is a 50 minute boil, not a 45 minute boil.
Other than that, it is a straight forward extract batch.
To get it to qualify as an Amber Ale, had to set the IBU equation to Rager, and the SRM equation to Daniels. I'm open to suggestions on the style (haven't tasted it). |

Nocicible, but not overwhelming hop flavor; significantly less of a punch than a pale ale.
Medium-light body with good head retention. |

Notes: The chocolate malt was ground fairly fine, and imparted quite a bit of bitterness to the final product. IBU is likely higher than what the recipe calculates.
Toast the coconut at 300F for an hour, turning a lot to avoid burning. Try to time it so you can add it hot to the primary and avoid contamination.
Also, use a bag for the coconut. I left it loose in the primary and had a lot of issues with it clogging my siphon tube when racking. |

Notes: Add 1 dried chipotle to the boil with 10 minutes left and allow to infuse; remove when boil is done. For additional peppers, add to 8oz bourbon and allow to infuse through primary fermentation. Once primary has completed, add syrup to secondary vessel and rack beer onto it. Sugar in syrup should trigger more fermentation; once that's completed, add dry hops and then use a small child's medicine syringe or other device to add 10mL at a time to taste. My brew used about 80mL, but could use more or less to taste; taste daily and realize that the spice flavor will mellow with time. |
