Notes: Clone of Flying Fish Exit 11 Hoppy American Wheat which was made once in 2009. From Flying Fish's website:
"Exit 11 is an American-style wheat beer brewed with English ale yeast and three Pacific Northwest hops, Columbus, Palisade and Amarillo. It is brewed with 50% Belgian pale malt and 50% white wheat, and is an ideal summer thirst quencher, with its bouquet of tangerines and apricots. Exit 11 is available only during this one-time release, and only until it sells out across New Jersey, Pennsylvania and Delaware."

Notes: Steep your grains in water and heat water to 170° F for at least 20-30 minutes (the longer they steep, the more flavor you’ll get – to a point).
Remove the grains and add your malt extract.
Stir well, dissolving all clumps.
Heat to boiling and then add all of the hops.
Boil 60 minutes and turn off heat.
Cool as quickly as possible to 70° F.
Rack to your fermenter and pitch yeast.
After 7-10 days, rack to secondary fermenter on top of two prepared Grade B Vanilla Beans.
To Prepare:
Slice the vanilla beans lengthwise and open them up.
Scrape the tar-like interior of the vanilla bean out of the husk and put it and the husk into the bottom of the secondary fermenter.
After 14 days, prime and bottle or keg.

Notes: In the brew pot add honey,corn sugar, 2 Temple orange peels, and 1 1/2 gallons water.Bring to a slow boil. As soon as boil starts, scoop out orange peel. Continue a slow boil for 30 minutes, skimming any "foam" that forms on the surface. After 30 minutes add 1tsp Irish Moss, continue to slow boil for 15 minutes. Add to primary and bring volume up to 5 gallons. Rehydrate 1 package of "Red Star Pasteur Champagne Yeast". Pitch yeast when temperature of must is 65F-75F. Secondary rack when necessary.
This is my late Fathers recipe. It has won many awards, both in the SCA and in the mundane world. We just opened the last bottle, 20 years old by the way, and it is wonderful! Hope you have fun brewing this one. |
