English old ale is like English brown ale's big brother; they both have the same caramelly / nutty malt character with toffee like, roasty overtones. Old ales just have a lot more of it, and they approach barley wines in terms of body and alcoholic strength. Our formulation includes a proportion of oats which helps build a creamy, mouth filling body and hold a dense tan head atop a deep reddish brown beer. The unconventional addition of dark candi sugar boosts the gravity and ads a rich rum like dimension to the complex flavor profile. Although our old ale uses a healthy charge of English hops, the overall impression is of malty complexity rather than hoppy and bitter.
Originally brewed on 3-1-06.
Started out slowly but when active fermentation started it was the most vigorous I had ever seen up to this point.
Transferred to secondary on 3-8-06. somewhat cloudy and slightly yeasty flavor. Several days after transfer, it started to settle and clear up. Smells yummy. Still the occasional bubble in the airlock.
A week after to transfer 2ndary the brew has a sweet, caramelly, kind of fruity, smell. It smells good but definitely not done yet. The yeast is starting to settle out and the color is getting darker. Perhaps should have left in the primary longer (2 weeks). |

Notes: To commemorate Todd's visit to North Adams, we sampled Heady Topper, Focal Banger, and Pliny the Elder. We opted to try to replicate the Pliny recipe. WE actually used Pale Ale DME which is 6 L but is not in the selection dropdown. We also used a double packet of Safale 05. The yeast was rocking after less than 24 hours. The OG was around 1.084, much higher than above. I have a feeling that the IBU's are higher too. The process was pretty much standard - we boiled 3 gal, added almost 3 gal of near frozen water to get to the 5.5 marker. Got to chill the wort in the snow due to the recent storm that brought 10".
Tasted after 2 weeks in bottle and fiery and clean with a different bitterness than I am used to. Definitely taste the high ABV as even the high IBU's don't mask it. But still balanced and quality. Wish I had a Pliny for direct comparison. |

Notes: I have tried this now and it's great EXCEPT I would go with less bitter orange peel or go with sweet orange peel. I'll be brewing this again and testing that or sure. This beer is 100% tasty.
Add grain first, heat to 170, while heating add the Light LME and Munich LME. Once Water temperature hits 170 Remove the grain bag.
Bring Water to a boil once water is at a boil make the following additions.
1: 60 min boil: Cascade Hops
1: 15 min boil (45 mins after initial cascade hops), Cinnamon (1 stick or equiv) and Cascade hops. |

When brewing, you can substitute LME for HME. When using HME do not use Liberty hops for a one hour boil. HME is already hopped. Add at the end of the brewing process. Use the hop schedule for remaining hops. Steep caramel grain at 150 degrees for 30 minutes. Substitute Nottingham Yeast (Lallemand #-) with any Lager yeast, if preferred. Something like Saflager W34/70 would work as a substitute. If using HME, add this at the 5 minute mark. Also, it is OK to use corn sugar or a small amount of LME or DME as a way to boil your hops separately and add to your wert at the end of the brewing process. If using lager yeast, follow yeast instructions for time & temperature parameters. |
