Notes: Ferment at 65° F for 4 days, then raise to 72° F and hold until final gravity is reached.
Carbonate to 2.6 volumes of CO2.
Juice, zest, raw jalapeno, and barrel chips are added to 4 oz of tequila in a Mason jar and held in the freezer during fermentation.
Tequila is strained into the beer in the keg, then the jalapenos, zest, and chips are added to a fine mesh hopping tube and suspended in the keg with unflavored dental floss until the desired spice level is reached. |

Notes: Using Cherrywood grain at about 3% of total grain bill. Goal is to not taste like an ash tray, but to have hints of a smokey, almost faint, BBQ taste.
Adding chit malt to see if this is a good substitute for the wheat grain for a nice foamy head. If not, then go back to wheat.
Acidulated malt to increase the Brew House Efficiency? I have been at about 55%-60% in the latest brews. If this doesn't help, then I am going full on water chemistry (starting with RO and building up). |
