Notes: Steep the Cara-Pils and 2-row base malt 152° for an hour or until starch conversion is complete, then mash out at 170° and sparge with 180° degree water.
Heat the water to boiling and add hops. Boil for 45 minutes and add the Irish Moss. Boil 15 minutes more, then turn off heat and chill beer to 68° as quickly as possible. Rack to the primary fermenter and pitch the yeast.
After primary fermentation has completed (2-3 weeks), dump the 10 pounds of frozen cherries in the bottom of the fermenter and rack the beer on top of the cherries. Ferment in secondary for as long as you can stand it. I recommend a minimum of two months.
Then, bottle with corn or cane sugar to 2.5 volumes of CO2. |

For my personal taste I have too much caramel in this. The hops pull it through quite nice but the victory should be bumped up a bit. It's kinda like a newcastle but not as nutty/bready. I'm thinking upping the victory and replacing 120 with 80 or 60.
20 hrs at 30 psi does the trick for carbonation. Not a cask ale but nota lager either. accd to my calcs it should be around 2.0 vol. |

Notes: Recipe is built off of a 3:1 ratio of Maris Otter to flaked barley, shooting for a gravity of about 1.036. Specialty grains make up the remainder of the grain bill with a target gravity of 1.044. I wanted to keep this close to a traditional dry stout so I stuck with the recommended 1lb of Roasted Barley per 5gl batch.
Acidulated malts are used to adjust the wort pH to 5.2 (optimum for most barley beers). If you don't have access to pH testing equipment or strips, it's probably safer to omit it entirely.
BIAB efficiencies can vary wildly until you nail down your process, so consider double crushing your grains and running a 90 minute mash infusion. I've intentionally designed this recipe with a lower efficiency in mind, but a well established BIAB brewer can hit efficiencies as high as 85%! Adjust accordingly for your own equipment.
You want to maximize attenuation, so make sure that your mash temp is no higher than 152°F (67°C) to avoid extracting un-fermentable dextrin's. This means that you want to try and avoid applying direct heat, adding hot water or anything else that would cause the mash temperature to spike over 152°F.
Brew in a bag procedure:
1. Heat 11.7L (3.1gal) of strike water to 167°F (75°C)
2. Add grains to brew kettle in nylon bag
3. Stabilize the grain bed at 67°C (152°F) and hold for 60 minutes.
4. Remove the nylon bag and transfer to another vessel.
5. Sparge with 17.8L (4.7gal) boiling water to bring mash bed back up to 67°C (152°F). Add runnings back into the wort.
5. Hang or squeeze out the bag to extract any remaining sugars. Add runnings back into the wort. If necessary, top up with clean water to reach the boil volume of 22.7L (6gal).
7. Boil the wort for 60 minutes, adding the hops and spices as indicated in the ingredients list.
8. Cool to 21°C (70°F)
9. Oxygenate and pitch the yeast.
10. Ferment for 4-6 days in primary fermenter at 65°F (19°C) or until FG is reached. Because there are not a lot of sugars in this beer it tends to be fairly fast fermenting. Often the primary ferment will be complete in 72 hours if you ferment at room temperature.
11. (Optional) Transfer to a secondary and let fermentation complete and settle for 7 days.
12. (Optional) For best results, "cellar" or age at 10°C (50°F) to help drop yeast out of suspension.
13. Bottle or keg, condition for ~2 weeks before drinking. |

For water, add calcium chloride to reach about 100-150 ppm chloride. Don't use gypsum or epsom salt because the sulfate will accentuate the bitterness.
Mash at 150 °F (66 °C). Collect wort and boil for 60 minutes, do not add any hops. Cool the wort to 100 °F (38 °C) and transfer wort to a fermenter or keep in pot. Pitch the Lactobacillus of your choice, and add lactic acid as needed to achieve a pH of 4.4. If you are in a rush, sour as warm as you can reliably hold (up to 115 °F/46 °C), ideally above 80 °F (27 °C). Approximate souring time 1–3 days to reach pH 3.3–3.4. You can measure by taste, but the sweetness of the wort can make acidity seem milder than it will post-fermentation (even though the pH will rise slightly with fermentation and dry hopping). Once the desired acidity is achieved, return the wort to the kettle and heat to 180 °F (82 °C). Once the temperature is reached, turn off the heat and add the hops. Allow them to steep for 20–30 minutes before chilling to 70 °F (21 °C). Aerate and pitch a large starter of Brett (most commercial Brett strains are not packaged at a high enough cell-count to pitch directly). A 3-L starter on a stir-plate for a week should be adequate. Once the gravity stabilizes (two to four weeks), the beer is ready to package. If you are bottling, add the dry hops to the primary fermenter. If kegging, bag and weight the hops (I use new nylon knee highs and glass marbles) adding them directly to the keg during natural conditioning. Aim for 2.7 volumes of CO2. |

For biab; I find it easier to hit my og target by splitting my mash into 2 seperate tuns then combining them into the kettle.. You can go for all in 1 kettle but will usually result in lower og and is usually very messy. |

Notes: The grain bill is too big for starting at 5 gallons. Try starting with 6 gallons and sparge to 6.5 gallons. Buy PB2 on Amazon. Bottle is 16oz... maybe just use the whole thing instead of measuring 13?
