Notes: Plan to pitch 2 packs of rehydrated SAFALE WB-06. Chosen for the style, and ability to ferment at my ideal temp range of 70-74. I want to get the banana esters typical of a good German Hefe Weisen.
Expect to ferment 4-7 days in primary.
Will monitor gravity starting day 4, when it stabilizes at 1.008 (corrected) or less, will cold crash for 2-3 days.
Expect to bottle 5 gallons after boil off, cooling, trub loss, fermenter loss, bottling losses.
Bottle condition. Boil 0.6 cup honey in 1.5 cups water and put in bottling bucket xfering beer from fermenter. |

Mikeller uses:
Water, malt, roasted barley, flaked oats, dark cassanade, honey, hops, coffee, vanilla and ale yeast.
consider using a fan to drive off as much vapors as possible
hops added at 1.088
so it might be 110 IBU.
After brewing: multiple concentrated wort additions after 2 days of fermentation, together with brown sugar (cassanade) and a few coffee beans. |

Notes: The modern recipe according to Bateman's. Removes the black malt from the more traditional recipe and as a result it is much lighter color (EBC 38). Nottingham is not perfect match for their proprietary house yeast, but most similar available profile.
Dialing back the SG a bit to match the 4.8% prescribed by the brewery. Also dialing back the volume to 6 G in fermentor and matching ~40 IBUs. Changing salts and hops to grams.

Notes: Added 1/2tsp of all nutmeg,clove,allspice,Orange peel, and 2 cinnamon sticks to last 10min..one week in carboy now. Just waiting.. alright I tasted it 1 month in secondary then legged fkegged month. Wow... Had a buddy(beer judge) asked what style. He said it reminds him off pumpkin and cremebrulle. That's what I wanted. It would be awesome if I had used pumpkins instead off butternut. Maybe half half would be good. It tqsted buttery but didn't have the pumpkin taste. I still love it though. Very rich. Hops are very high in bu. But it doesn't over power it. Very good |

Notes: Porter made from maple sap, no water. Added 1 pint of maple syrup (same farm as the sap) at FO. From what I have been able to read, the consensus seems to be that not much maple flavor will shine through unless you use a gallon or more at FO or in a secondary, which I do not plan to do. Worst case scenario, it the maple will not be noticeable, and I'll be left with a solid porter; tragic. Going to ferment at 64F for a week then go up to about 68 for the duration, prob 3 weeks total in primary. BTW, the recipe called for 1# 40L, but my store only had about a half pound, so on a whim, used 120L for the other half. Perhaps this will be a stout. |

FG 5 brix (uncorected refractometer), corrected to 1.013, 62% AA, after grains fermented, before fruit/lactose.
This is mostly inspired by Gun HIll's Mosaic Soft Serve (3% ABV, oats, lactose, delicious), and Mad Fermentionist's Mango Vanilla Hopsicle.
