Notes: Mash at 145 for 30 minutes. Then raise to 158 for 30 minutes. Then raise to 170 for 10 minutes. Then add first wort hops.
Boil for 80 minutes.
Then chill to 70 and pitch yeast. Ferment at 70 and allow to free rise as much as it wants. Once gravity is 1008 set temp to 70 and keep it there for 7 days. |

Notes: Take the first gallon off the mash and put into pot on the stove. Then add 1 can of Libby Pumpkin mix to the pot and raise the temperature to 150 degrees, stirring constantly - remove from heat and put on a piece of wood or in the oven for 45 minutes, then after 45 minutes of keeping the pot temperature at 150 degrees, bring it to a boil on the stove and add it to your boil kettle with the rest of the wort. Wort will likely reach boil before pumpkin mixture so turn off burner and wait for pumpkin mixture, returning back to boiling after pumpkin addition. After boil, start hop additions and watch for hot break.
Add 1 teaspoon of pumpkin spice to the boil with 15 minutes left.
Chill to 70 degrees after last hop addition and transfer into fermenter after adding yeast. Swirl to kick off fermentation.
Add 1/3 teaspoon of pumpkin spice to the keg during transfer from the fermenter.

Notes: Recipe designed to brew a tripel, then proceed with steps for Allagash Curieux clone, following steps outlined in HomeBrewTalk.com forum (thread 250654 by 1Mainebrew).
Hops: BSG brand Czech Saaz AA 2.4%.
Be sure to check specific AA of hops used and adjust hopping rate appropriately to achieve IBU 30 +/-.
Primary 30 days @ 68 F. Sealed container, leave on yeast cake.
OAK
3 oz Med or Med+ oak cubes. Soak in Jim Beam bourbon for 30 days. Decant the bourbon at 15 days and add fresh.
CURIEUX
At 30 days, rack to secondary.
Measure FG.
Add bourbon-soaked cubes (but not the bourbon).
Secondary for 3-12 months @ cool temp, depending on taste.
Add 0.25 to 1 cup of JB bourbon during secondary, depending on taste.
