Judge 1 needs more bitterness
judge 2 too dark (too much burnt black malt) needs more caramel toffee sweetness
Judge 3 Medium to medium high sweet malt, low to very low roast flavor. The malt has a caramel and chocolate richness that predominates the hop bitterness. Hops are low and floral. The beer is well attenuated and clean. , but a little sweet.
good beer that could be a little more roasty than sweet. Hops are hard to find, but there is a pleasant balance that makes the beer enjoyable. |

Notes: Mill the grains and mix with 2.89 gallons (11 l) of 163°F (73°C) strike water to reach a mash tempera- ture of 152°F (67°C). Hold this temperature for 60 minutes. Vorlauf until your runnings are clear, then run off into the kettle. Sparge the grains with 4.3 gallons (16.5 l) and top up as necessary to obtain 6 gallons (23 l) of wort. Boil for 60 minutes, following the hops schedule.
After the boil, chill the wort to slightly below fermentation temperature, about 63°F (17°C). Aerate the wort and pitch yeast.
Ferment at 64°F (18°C) for 72–96 hours, and then allow to free rise (not higher than 70°F (21°C). At that point, crash the beer to 35°F (2°C), then add the dry hops. Wait five days (or until hops character matches your preference) then bottle or keg the beer and carbonate to approximately 2 volumes. |

| Notes: Used 1 pack Omega tropical IPA and 1 pacck of Omega Hornandal in starter with 5 quarts of saved mash from saved grain bill. Mashed 1 hour at 152. Recirculated for 10 min and boiled for 45 min. added 2 oz. Huell Melon for last 10 min. Dropped temp to 180 added 3 oz each of Halaxy and Rakau pellets for 20 min whirlpool. Added 3 oz each of same hop and whirlpooled for 20 min. Left hops in while we dropped temp to 80 to pitch yeast. Used oxygen in fermenter. OSG 1.062. Added 4 oz each of Galaxy and Rakau 24 hours in fermenter. Added 4 oz each of same hop On day 3. Took gravity on day 3 |
