| Notes: Start with RO water and add salt additions to mash water. Perform a single-infusion mash for 60 min. with 1.3 qt./lb. at 154°F (68°C). Vorlauf until wort is free of grain. Add salts to sparge water (with the exception of baking soda or pickling lime). Add acid to bring the sparge water to 5.6 pH then fly sparge at 170°F (77°C) until around 8 gal. (30.28 L) of wort is collected. Boil for 90 min., or until about 6.6 gal. (25 L) of wort remains. Whirlpool and chill wort to around 60°F (16°C) and transfer clear wort to fermenter. Add O2 and zinc and pitch yeast. Chill wort to 55°F (13°C) and ferment until fully attenuated keeping temperature below 62°F (17°C). Fermentation can take a while for this big brew, so be patient. Carbonate to 2 vol. (4 g/L) CO2 and enjoy with sticky toffee bread pudding. |

Notes: Add 1.5 Tbsp of Penzeys pumpkin pie spice and add to canned pumpkin. Sprinkle with brown sugar and roast pumpkin on baking sheet in oven. Use in mash
Take gallon of runoff and add brown sugar and marshmallows, and boil down into caramel. Add to final volume.
Use double the yeast nutrient and build a starter.
Taste before and after fermentation. Use judgement to see if it needs to be put on bourbon spirals.
Add 1 oz of pecan extract, 1.5 oz Mexican vanilla extract, and 2 oz of pumpkin spice tincture at kegging. |

Notes: Hazy Sculpin sounds better than the normal sculpin, although the beer is outstanding, or used to be.
This is a consensus from 4 different published recipes for sculpin with significant reduction of 60 min and 30 min hop additions to lower the IBU to reasonable number.
1-Omit whirfloc
2-Dry hop on day 4 of fermentation w/ 1st batch of hops.
3-On Day 8 replace dry hops with fresh round of hops for 4 more days.
Calculated IBU on my spreadsheet is 88.5
Calculated SRM using Morey’s equation is 9.4., using Daniel’s
formula is 7.2 which is closer to Brewer’s Friend number.
ABV on my spread sheet is 6.6%.
High altitude, 6627’, boiling temp is 203, evaporation rate at 25%
Will enter composition of water later, although our water in Colorado is just simply nice and crisp. Beats SanDiego water. I’ve been adding 1 tsp of Calcium Chloride and 1/2 tsp of gypsum.
Mash rest time = 60 @152 plus 15 min at average of 165. It takes time for my RIM set up to react.
Turned out one delicious IPA I’ve brewed. Definitely a permanent fixture of my humble six tap garage brewery. Didn’t have Crystal on hand, replaced it with Chinook.
