Notes: Merhaba, bu reçete ve yontemle 47. Defa deneyimlemiş ve sonuc almiş biri olarak gonul rahatligiyla kullanabilirsiniz.
Kazanim 30lt aluminyum kazan, fermenterim 33lt plastik kova.
Temelde her seferinde 5kg malt dan 23 litre bira aliyorum.
Kombinasyonlarim:
4kg pilsner + 1kg munich + 50gr brewers gold
4kg pale ale + 1kg kristal + 50gr brewers gold
4kg pilsner + 1kg kristal + 50gr brewers gold
Kaynatma yontemim;
- Kazana 18litre su dokuyorum. 35 dereceye geldiginde 5kg maltlari atiyorum ve 67 dereceye kadar getiriyorum.
-60 dakika boyunca her 15 dakikada bir maltlari karıştırıyorum.
- 60 dakika sonunda mayseyi 75 dereceye getirip 10dakika bekletiyorum.
- sure bittiginde torbayı kaldirip suzgecle maltda kalan suyun akmasini bekliyorum.
- 12 litre soguk su ile sparge yapiyor ve maltda kalan sekeri almaya calisiyorum.
Toplamda kazanimda 27-28 litre su olmus oluyor.
Kaynatmaya geciyorum. Toplam 60dakika
-Kaynama basladiginda 25gr otumu atiyorum 60 dakika kaynayacak
- son 20 dakikada 12.5 gr otumu atiyorum.
- son 7 dakikada 12.5 gr otumu atiyorum.
Kaynama bittiginde 10-15 dakika bekleyip kaynayan birayi fermenterime aliyorum.
Sogutucum olmadigindan 14-15 saat sogumasi bekleniyor ve 23-24 dereceye geldiginde mayayi atiyorum.
Fermentasyon ortalama 5-7 gun suruyor.
NOT: Yazdigim metodu, maltlari cesitlendirerek, degistirerek kullanabilirsiniz.
Hititmalt larda genelde %65-70 verim alinmakta.
Ot konusu: ayni receteye bagli kalarak, ARDIÇ OTU, çam yapraklari, kekik gibi denemeler yapabilirsiniz. Cok lezzetli oluyor.

Notes: Full volume mash in 20 gallon electric Blichmann Surface kettle with false bottom.
Added 1 tsp lactic acid post-boil. Let kettle sit over an hour with immersion chiller connected to recirculating ice water bath to reach pitch temp of ~48* and allow wort to drop clear of break material. Kettle was covered tightly with foil during this time to keep bees/bugs out.
Pitched three 200B packs of WLP802. Two packs were very fresh and the third was about 1 month from expiring. Cell count should be ~400B. |
