| Notes: This is a hybrid of Chapeau de Dix Gallons. I took my advice and bittered with Nugget....really excellent! Used Citra and Amarillo in the body and at the finish. Great IPA hop bill in a beautiful Bretted base grain base....a really typical Marsh Farmhouse brew. I am barrel tasting now. Really superb!! |

Notes: Tradisjonelt skal denne lages med einerlåg, det vil si at bryggevannet har trukket med einekvist.
Einerlåg lager du enkelt selv ved å fylle kokekjelen/bryggemaskinen med tynne einekvister (1-3 kg) og fylle på med vann. La stå og trekke ved 60-80°C i minst 60 minutter, eller over natten. Bruk så dette vannet til mesking og evt skylling.

Notes: -See water notes!
-Mash with 3.5 gallons (12.5 L) of water and go for an extra 20 minutes for full conversion (80 mins total). Mash in low temperature range of 145-150F.
Yeast Care & Starter:
-Take out of fridge 1 hour before use
-Mix 1 full pack of S04 and 1/4 pack of S05
-Divide into 2...1 for each bucket
-Empty yeast into two seperate 75 ml. of RO water at 70F (use big jar because yeast will expand)
-Let sit for 15 minutes
-Stir and add cooler water to bring it down to temperature of the beer.
-Pitch into buckets before 30 mins is up!
