Notes: Roast raw Cacao Nibs 300 for 12 min.
Put nibs and 2 vanilla beans (split and cut to 1" segments) in 4oz vodka to cover for 1 week. Pour entire mix in fermenter after 10 days.
Cold brew a lighter roast coffee (Thorntons Roasters Guatemala used this time), coarse grind. Add to taste, ~12 oz?
Can use S-04 or A01 for yeast. |

this Beer really worked out well. If I had to do it again I would reduce the IBU to 26. The addition of eclipse hops has given the beer a orange /mandarin flavor which is extremely appealing.
I will keep this formula exactly the same with the slight reduction in the IBU. |

Notes: Mash the 3kg of Belgian Pils malt at 66°C for 1 hour. Lauter and sparge to a pre-boil volume of 15 liters, and boil for 90 minutes, following the hops schedule. Chill to 66°F (19°C), pitch the yeast, and ferment to completion. Rack to a secondary fermentor, then mix the honey with warm water and add to the secondary. Allow the secondary fermentation to complete and final gravity to stabilize before packaging. |

Notes: This is similar to NEIPA 2, except that we've complicated things slightly :)
Adding roughly 20% of malted white wheat (in place of some base malt). This extra protein should improve head quality(?).
This in addition to 20% of oats. Why am I doing this again?
I've also added a meager 3% Crystal 40, in hopes of getting a slightly more orange tint.
I was originally going to make this Galaxy + (Cryo)Citra. However, fear of cryo-burn is real, so I've improvised a bit.
Citra down to 1oz (.5 of cryo). Add in amarillo of 2oz. Also scale back Galaxy slightly to 1.5 (big bag of it, and can overpower other hops).
Overall, 1 oz whirpool (0.4 / gallon) and 3.5 oz dry hop (~ 1.5 / gallon).
According to recent beersmith podcast w/ M. Tonsmeire, suggests up to (1 / gallon) whirpool and ( < 8 / gallon) dry hop. |
