Roast raw Cacao Nibs 300 for 12 min.
Put nibs and 2 vanilla beans (split and cut to 1" segments) in 4oz vodka to cover for 1 week. Pour entire mix in fermenter after 10 days.
Cold brew a lighter roast coffee (Thorntons Roasters Guatemala used this time), coarse grind. Add to taste, ~12 oz?
Can use S-04 or A01 for yeast.
