Ginger is finally finally a decent price. It has been $40 - $60 per kilo!!
I did lots of reading and I don't want this to be too dry and harsh.
Thats why I chose to use a good fermenting American Ale yeast Vs Champagne yeast which is designed to dry it right out.
**Update**
It was still very dry and required some back sweetening with a Ginger Syrup (e.g. Sodastream) at the time of serving.

Sara and Brandon's second beer collab. Sara was craving something light and crisp, and thought the Helles sounded perfect for summer. Having never brewed one I immediately started sifting through recipes and watching youtube. I wanted to give us more creative freedom with hops, Sara liked the idea of Simcoe so I thought Willamette would be a nice pairing to give it some more classic German spiciness to round out the flavor.
We will most likely also go more aggressive on the late boil hopping to give a more pronounced hop aroma/flavor. The goal is to make a very dry and crisp beer. I will most likely play into a more bitter water profile to help accentuate that. I rarely find my beers as bitter or dry as I expect, or I just have a high tolerance for dryness. |

We're doing the same nutrient schedule as this batch, and generally following the same process: https://www.brewersfriend.com/homebrew/recipe/view/638699/mead
There were two differences, cause more by not noticing the details on the last recipe, rather than conscious choices. We added only half a campden tablet to roughly 7 gallons of water, instead of a full one, and used only two packets of yeast, instead of 4. |
