After brewing myself, I recommend dialing back the late hop addition to 1 ounce. 1.6 was quite pungent, and overwhelming. I'm guessing this wasn't as noticable with claw hammer's reviews as they lagered for 2 months. My guess is this hop character would have dissipated a bit by then.
For me, I got a lot of dill flavour as well as lemon flavour from Sorachi Ace. If I brew this again, I might consider cutting the hop addition with some Hallertau Tradition, which is one of my favourite hops. |

Pumpkin for boil:
Roast 3lb cubed (1 inch) pie pumkin for 1 hr at 375 (while mashing), tossing every 15 min. After browned, toss w some brown sugar (1tbsp), 2 tsp spice mix and water, and put back into oven for 10 min.
Put in for full 60 min boil
1 Vanilla bean (split) - into boil at 52min (8 min boil)
Pumpkin for Secondary
2-3 lb finely cubed pie pumpkins roasted for 1 hr @375, then candied w 4 oz blackstrap molasses and 4 oz grade B maple syrup on stove. Secondary for a week FORGOT TO ADD VANILLA? Split bean and put in secondary now.

Notes: Partial wort souring:
1. Prepare 2 litres of wort from 400g of the pilsner malts three days prior brewing (marked separate on the grain bill).
2. Boil the wort and pour into sterilised erlenmeyer flask.
3. Let the flask to cool to +50C.
4. Throw a generous handful of uncrushed pilsner malts into the flask.
5. Cover the flask with sterilised aluminum foil. Seal with rubberbands.
6. Keep the flask temperature between 40-50C for three days.
7. Pour the soured wort into a small kettle and boil for 10 minutes.
8. Add to the main wort when brewing. |
