Wood chips are probably going to float and that means a lot of oak will be making contact with the air in the fermenter and not imparting oaky goodness into the beer.
So a handy tip is to place the chips into a clean and sterile hop bag and then weigh the bag down with something heavy and inert such as a glass marble or three.
hips impart flavor pretty quickly, and usually, 7-10 days in the fermenter is about as long many brewers go before the effect on the beer becomes overpowering. |

Notes: Mash @ 149F for 90 minutes. Fill souring keg with wort and cool to 95F (or lacto temp). Sour for 2-3 days (approx PH of 3.3 to 3.7)
Add soured wort to brew kettle and brew for 15 minutes, adding the hops at the 10 minute mark.
Chill wort to pitching temperature and ferment @ 65F for 7 days. Cold crash @ 40F for 2 days and keg. Set keg to 20PSI (3.5 vols) for serving. |

. No envase, fiz uma infusão das raspas de laranja em 300 ml de água por 20 minutos juntamente com o priming (fervi a água deliguei o fogo e adicionei o açúcar do priming e as raspas de laranja e deixei em infusão por 20 minutos). e despejei no balde apos a trasfega para envasar.
