Add half a campden tablet and let sit for an hour. 10. Add the mixture to the keg. 11. Bring the keg to 19 degrees. 12. Add the S-04 yeast. 13. Sit the keg at 19 degrees until the airlock becomes inactive. 14. Seal the keg and sit for another 3 days. 15. Cold crash to 0.5 degrees C and add pressure of 10 PSI. 16. Serve from keg at just below room temperature.
