Entre 20 et 18°C pendant 10 jours
> Premier DH jour 3 (1.5kg Citra + 1.5kg Mosaic) à 20°C
> Jour 4 tu peux envoyer un peu de CO2 par la vidange totale pour remettre le houblon en suspension
> Jour 5 (après 48h de DH) tu commences à purger le houblon pour éviter un contact prolongé avec la bière et donc un hop burn (extraction des tanins)
> Second DH à la suite jour 5 (1.5kg Citra + 1.5kg Mosaic) à 18°C
> Jour 6 tu peux envoyer un peu de CO2 par la vidange totale pour remettre le houblon en suspension
> Jour 7 purge
Garde 7 à 10 jours 12°C
Cold Crash 7 jours
CO2 : entre 4 et 4.9g/l avec une cible à 4.4-4.5g/l |

Notes: Equipment: 2x19L pots on 2x electric induction hotplates.
Fermentables added directly to 165F strike water (split between two pots) Reduce heat to level 1 and cover/uncover as needed to maintain 154F for 60 min.
Fermentables removed with mesh strainer and final filter with cheesecloth. This is labour intensive, but is the reason for the 80% efficiency.
Bring both pots to boil.
Hops added per recipe.
Irish Moss pellet added at 15min.
Ice bath to reduce temp.
Move wort to pail and top up with cold water to 23L.
Add yeast. Fermentation 3 days, move to carboy for 7 days.
Move to secondary carboy and add Super-Kleer, 7 more days.
Prime with 150g corn sugar at bottling.
Typical 4 week maturation. |
