| Notes: Salts to mash and sparge RO water. Mash water 8 gallons (3.75 gallon for barley mash and 4.25 gallons for Cereal wheat mash). Sparge water is 9.5 gallons. Mash barley with 3.75 gallons at 125F for 15 to 30 minutes and in a separate cereal mash add Raw milled wheat to 4.25 gallons boiling mash water. Stir for 15 minutes to gelatinize. Turn off heat while stirring to avoid scorching the wheat. Then add hot gelatinized cereal mash to barley mash target temp 153F for 45 to 60 minutes (watch your temp so you don't overshoot). Add rice hulls and sparge as normal. Collect 12 gallons and boil until 11 gallons. I use a steam slayer so 1.5 hour boil = 1 gallon evaporated. |

Notes: Steep grains for 40 minutes at 150 degrees 1.5 gal 4 gal batch sparge 20 minutes.
Bring to boil. Remove from heat, add LME and DME, and return to boil.
Add 2 oz Northern brewer hops. Boil 30 minutes
Add 1 oz US Fuggles. Boil 20 minutes
Add ½ oz US Fuggles and Irish moss boil last 10 minutes
Remove from heat. Soak wood chips in whiskey and add water to 6 gallons.
Cool to 85 degrees
Add wood chips and pitch yeast.
Primary Fermenter with wood chips 7 days
Secondary Fermenter with no wood chips 14 days
