Notes: 1. Gather all ingredients: Grain, DME, yeast, pumpkin pie spie, pumpkin puree, oats
2. Gather all supplies: Fermentor w/lid, kettle, spoon, towels, thermometer, grain bag, sanitizer, hydrometer, strainer, drip pail
3.Fill kettle with 3.5 gallons of water. Heat to around 160 degs.
3a. While the water is boiling, add the pumpkin pie spice to a tray and set the airfryer for 400 degs at 10 minutes.
4. Remove from burner and fit the grain bag. Add grain and stir to ensure incorporation. Add pumpkin to bag. Let the grain steep for 30 minutes (covered if possible). Remove the bag from the kettle and let the wort drain back in.
5. Bring the wort back to a boil (200 degs). Add the DME and hops. Set a timer for 60 minutes.
6. With 10 minutes remaining add the pumpkin pie spice and turn off the burner after 5 minutes
7. Sanitize the fermentor and prepare ice water for rapid chilling. Cool the wort down to roughly 70 degs (or pitching temp). When wort is cooled, transfer to the fermentor and pitch the yeast, shaking the bucket to aerate |

Begin Vorlauf!
SPARGE
Heat 7gal of Water to 174F. Add to Sparge Vessel.
Recirculate 4 times (or until clear running's) prior to collecting wort.
Attempt to Sparge over ~24 minutes (~1gal/3min), collect 8 gal into boil kettle.
BOIL
Check Pre-Boil Gravity (goal: 1.044) + pH
NOTE: Make sure to adjust for TEMPERATURE

Add 1/2 crushed Whirlfloc tablet @ 5 minutes.
Chill wort rapidly to ~70F after completion of Boil.
Once temperature is ~70F: place lid on kettle, and allow immersion chiller to rest in wort for another 5-10 minutes (to help settle particles in suspension).
Drain wort from Kettle into Mash Cooler through Hop Cylinder
Gravity feed 5.25gal (5gal mark) of wort from Mash Cooler into Catalyst Fermenter
Allow Ranco/Chest Freezer to adjust wort temperature to goal starting temp (cool to 68F).

Notes: Planning on pitching 10-11 oz Cali slurry from prior Cream Ale. To 1.011 after 11 days.
Estimate 5.25 gallons to bottle (turned out to be 5.18 gals bottled). 5 oz corn sugar. Assume 69ºF. 2.5 vols CO2 goal. Perfectly carbed, delicious batch best of year.
Version II April 1, 2021 same but 1/2 ounce of Idaho 7 wf 1/2 ounce cascade at 15 minutes. And dry pitched Lallemand Kveik at about 85º at noon. Fast ferment start and dry hopped after only 24 hours 1 ounce each of Galaxy, Nelson, El dorado and Azacca. Finished 1.012 after 9 days.
Estimate 4.7 gallons, temp 78ºF aim 2.45 Vols-- 4.7 oz Dextrose. (actual= 4.53 gals.)
Did a batch of this at Big Elm and sold out in 5 hours. October 2022.
11/21/22 similar batch in Santo Domingo. 3 lbs Maris Otter and the balance 2row. Boil hop 1 oz Azacca and 1 oz Cascade whirlpool. 1.055 OG
Don't Pet the Cat, very nice Azacca and Nelson hint of grapefruit with apricot? Maybe needs more mouthfeel or a few more IBUs but very nice.
E-2022 just opened a bottle from november now March 4 and not oxidized still real good. |
