Notes: Prepare a same day pint yeast started w/ 4+ Tblspoons of wort and start brewing Crystal malt in 170 deg water - hold 10 minutes, sparge w/ 170 deg water. Bring LME; sparged run off + hops _ 2 tsp fresh crushed (rolling pin) coriander seeds to a boil - 50 minutes Last 10 minutes add I Moss and 1 capsule of servomyeces. Add 2 tsp of crushed coriander seed + 2 tsp of fresh grated nutmeg to primary.
Honey - Added "honey' was near honey stage (uncapped nectar from frames) pulled from our hives - slightly lower sugar level than capped honey. Using it for brewing. Added it after flame out when wort is cooled to 100 degrees. (Preserve aromatics). Take SG reading (refractometer read 1.087 SG for this, likely bc of the use of the uncapped frame nectar/ near homey.). I should still get a 9 or so ABV. I will add 1.0oz of citra hops (or similar hop) after it goes into secondary as a dry hop.
I will prime w/ 3/4 cup corn sugar heated in 3/4 cup of water - added to bottling bucket - rack into bottling bucket just before bottling |

Notes: HOPS SCHEDULE
1.75 oz (50 g) Columbus hops at FWH
1.25 oz (35 g) Columbus at 30 minutes
1 oz (28 g) Chinook at 15 minutes with 1 tablet Whirlfloc T and yeast nutrient
1 oz (28 g) each Centennial, Chinook, and Columbus at flameout
1 oz (28 g) each Simcoe, Mosaic, J-17, Centennial, and Nelson Sauvin at dry hop (6 days)
DIRECTIONS
Bring 4.5 gallons and steep at 162°F for 30 min. Remove grain.
Boil for 90 minutes. Cool to 66°F (19°C) and oxygenate to 12 ppm. Pitch the yeast and let ferment for 5 days, raising the temperature to 72°F (22°C) by day 4. On day 6, rack to secondary with dry hops. Let sit on dry hops at 70°F (21°C) for 3 days. Crash to 32°F (0°C) on day 4 and add silicic acid (sold as Biofine Clear) on day 5 and let sit for 2 days. Transfer to keg and carbonate to 2.5 volumes (about 11 psi at 38°F/3°C) and serve as fresh as possible. |
