Notes: Smell of zesty orange peel. Fresh tasting with good body and notes of freshly crushed coriander seeds. Head is aggressive on the pour due to high carbonation, but settles comfortably after a few minutes.
Rated first place by numerous brewery guests between brews 1-7. Recommended for submission into homebrew contest, but too precious to give up. All gone now!

Directions for 5gal batch:
O.G.: 1.056-1.060
F.G.: 1.008-1.010
Bitterness: 18BU
Colour: 4SRM (8 EBC)
Alcohol: 6.3% by volume
Add malt extract, honey, and boiling hops to 7.5L water and boil for 60 mins. Add the flavor hops, ground coriander and orange peel for the final 5 minutes. Add the aroma hops for the final 1-2 minutes of boiling. Strain, sparge, and transfer immediately to 7.5L of cold water in the fermenter. Top off with additional water to make 19L. Aaerate the wort very well. Pitch the yeast when the temperature of the wort is about 21C. Ferment at about 21C for about 1 week or when fermentatino shows signs of calming and stopping.
Prime with sugar and bottle or keg when fermentation is complete. For added attraction add one whole coriander seed to each bottle when bottling (microwave them if worried). |

Notes: Author's Tasting Notes: Silky chocolate and coffee backed by smooth caramel.
[I][ brewed this with extract, so the extract version is the real thing. The AG conversion should be dead on. Both are included. [I] used Wyeast 1450 PC - Denny's Favorite 50. This is a summer seasonal strain, originally the discontinued BrewTek CL-50, made famous by Denny Conn. Wyeast suggests 1056 as a good substitute, but [I] would use Wyeast 1028 or 1084. Mine finished out at 1.020 with Denny's - just a tad higher than it is supposed to.
Coffee and chocolate hit you up front intermingled with smooth caramel flavors that become noticeable mid-palate. Nice roasty finish rounds it out. Balanced and not cloying at all, but obviously leaning slightly to the sweeter side. Very smooth and creamy. You would think at least a little coffee or chocolate is actually used in this brew, and that is where it gets the name - Deception.

Notes: Attempting at Westvleteren 12 clone.
Added French Saison yeast 3711 when gravity was 1.035. This occurred on day 4 post brew and 3.5 days of active fermenting. Purpose was to attenuate the beer even more.
OG was 1.103
FG was 1.014
ABV is 11.6%
Racked to secondary after 1 week. Tasted drier than expected but flavor was bit rough.
Tasted after 7 weeks and it's coming along nicely. There are hints of black liquorice on the nose and some spice.
Bottled after 9 weeks using 5oz of Corn Sugar. |

| Notes: Place Grains (8oz) in 3.5 Gal cool water. Raise temp. to 157F (higher temp for more dextrin extraction) and hold for 30min. Pseudo-sparge. Bring to boil, kill heat, add DME, return to boil -> boil 10 minutes before beginning hop schedule. Hops/Misc.: Bittering at 60min, Flavor + Orange, Lemon, Coriander, and Moss at 15min, Aroma at 1min. Cool in ice bath (~25min) to 80F. Siphon into primary and pitch liquid yeast directly in at 75F. |

Notes: Steep grains in 1.5 gallons of water at 155ºF for 30 minutes. Rinse grains and remove.
Add .5 gallons of water plus the dry malt extract and bring to a boil.
While boiling, add the hops per the hopping schedule.
Add Irish moss after 45 minutes of boiling.
Cool the wort to 75ºF and add to 3 gallons of cold water to primary fermenter and top off with cold water to make five gallons.
Pitch yeast and aerate well. Ferment in primary for 5 days.
Rack to secondar and add dry hops per schedule. Ferment for an additional 8 days.
Rack to bottling bucket and priming mixture. Bottle and condition in bottle for at least two weeks. |
