Notes: Heat 1.3 gal of water to 165 °F Crush grains and steep, settling mash at about 152 °F for 60 min. Sparg with 1.3 gal. water at 165°F
Add DME and molasses, bring to boil. Add hops to schedule.
Toast the caraway seeds over medium heat on a stove until aromatic. Remove from heat and add caraway to wort. Steep 30 min. then begin cooling. Top off in fermenter with water to make 5.25 gal.
Chill to 68 °F and pitch yeast slurry. Ferment at 65 °F for 10 days. Rack to secondary and cool to 50 °F. Lager for three weeks at this temperature. |

Zacieram jasne slody wrzucone luźno w 64 st. C w 3.2 l wody. Do tego piwa idzie kranowka przefiltrowana plus jakieś resztki chlorku wapnia.
Filtracja przez falszywe dno, wysladzanie ok. 2 l wody. Otrzymałem 4 l brzeczki o 10.2 P. Zacieralem 6 h przed warzeniem.
Po gotowaniu otrzymałem 10.5 l brzeczki o 15.4 P. Także wydajność bardzo fajna, udana na prawdę metoda szybkiego zacierania.
Dodałem 6 łyżeczek gestwy Tormodgarden w temperaturze 22 C. Postawiłem w gospodarczym na regale na fermentacje.

Trochę wolniej fermentuję, ale bulka ciągle dość intensywnie. Temp. 24 V.

Po południu opadło już dużo drozdzy. Temp. spadła do 23 C, ale ciągle jest bulkanie.

Brak oznak fermentacji. Po południu postawiłem fermentor koło kaloryfera rozgrzanego i przykrylem.

Rano i popołudniu temperatura wewnątrz to 28 C. Wieczorem zmierzylem blg i wyszło 1.016 w nieznanej temperaturze. Może jeszcze dofermentowac.

8:00 Dodałem 66 g Mosaica i 34 g Citry na zimno.
20:00 dodałem jeszcze 14 g Mosaica.

23:00 zabutelkowalem 9.33 l piwa. Nagazowanie na 2.2. Odzyskalem 0.5 l z chmielin.
Wrazenia z degu
Po tygodniu od butelkowania bardzo fajna, zbbalansowana black IPA. Goryczka zaznaczona, aromat i smak głównie cytrusowy, ale są również inne rzeskie tropikalne owoce. |

Notes: Add 3 gal of Cider Hill Apple Cider to the primary fermenter. Add 2 campden tablets, cover and add airlock. Wait 24 hours.
Add 15 drops of pectin enzyme.
Boil 1 lb of brown sugar and 1 tsp of yeast nutrient in 2 cups of water and add to primary firmenter.
Take temperature sanitize yeast packet and add to primary.
After 3 to 5 days and there is still activity in the air lock, siphon to secondary carboy and place stopper and airlock in carboy. Allow bulk aging for 3 months. Check specific gravity and when it is the same on consecutive days bottle or keg as desired.
