Notes: First basic stout recipie, doing extract and steeping, no mini mash. Add coffee or change it up in later brews.
By intention, chocolate malt is down a bit, see how that goes then invert future recipes.
Not sure on English or London ale yeast strains...
Thought of using amber malt extract but suspect that will make it a bit less dry and add to a sweater malt profile, this is more focusing on the steeped grains.
Some stouts are fermented warmer and colder mashed, seems odd. Havent decided on changing water chemistry. May do so to change malt / hop balance only (not doing this as malty balance to start). May add some bicarb soda to steeping to try and manage pH - not doing that but will measure pH.
Brew. Taste. Style. On YouTube had an interview with George Copley (Australia). With a winning imperial stout. Good info in there. 200g each, chocolate, roasted barley, crystal 40 (ish) and carafa special 3. Used joe white products. Also used amber / Morris otter base. It was alot more bitter though.
The carafa 3 really darkens it. Going to leave it out and go higher proportions of the others for this one, as I dont want real bitter notes. Could try export stout to that recipie in future.

For this iteration, should have kept to about a 6% ABV plan or added more hops. Of the two malt extracts, I would back off of the dark DME first. It was maltier than expected, tasting as much like a dopplebock as an amber. |

Notes: Bring 2 gallons of water to about 162°F and hold. Steep the grains for 15 minutes, then remove the bag and allow to drain into the wort. Add 3 gallons water and boil. Add the LME while stirring and stir until completely dissolved. Boil for 30 minutes, following the hops schedule.
After the boil, chill the wort to slightly below fermentation temperature, about 73°F.
Ferment at 74°F until the completion of primary fermentation. Combine dry hops and add half to the fermented wort. After two days, add the remaining dry hops, and allow 72 hours of additional contact time (five days, total).
Brewer’s Notes
This beer will be smooth in the mouth and features aggressive late and dry hopping, making it more of a “New School” (hence the name) American pale ale. Note, too, the shortened boil time: With no bittering hops to isomerize in the boil, we can get away with a shorter boil time designed to drive off SMM/DMS and dissolved oxygen. This beer features bright hops flavor, and despite the minimal “hot side” contact time on the hops, it makes up for it in sheer volume—28 IBUs are derived from the whirlpool (or flame-out, if you don’t whirlpool) hops, so be sure to allow 15 minutes of contact time before chilling.
Beer is cloudy assume from the Oat Malt. Maybe substitute and end with a clearer beer? Great balance, hoppy flavor but not bitter and not fruity like a hazy. More pine notes. OG and FG measured perfect to recipe. Have 7 gal boil kettle, steeping 5.5 gal worked fine and no issues with boil over. Really good summer beer, getting good reviews from friends. |
