Notes: Add Cracked grains to steeping bag in 2 gals of cold water and bring up to 150F. Steep for 15 minutes, remove bag without squeezing.
Bring water up to a boil and add liquid malt and dry malt. Boil for 5 minutes before adding Columbus hops. Boil for 40 minutes then add the Mount Hood hops. Boil for 20 minutes then cover and begin cooling. Once wort hits 190F, add the Cascade hops.
Add 2 gallons of cold water to fermenter, remove hops bag from boil pot and rinse with 2 gallons of cold water. Add wort to fermenter to bring total volume to 5 gallons. Cool to 70 F, aerate, then add Amylase Enzyme and yeast.
Ferment at 65-70F for 1 week before transferring to secondary. Clear, then bottle. Prime with 3/4 cup of corn sugar.
THIS BEER WON 2ND PLACE IN THE HAMPTON ROADS BREWERS' CUP DECEMBER 2017 COMPETITION.

Notes: Steep crushed grains in 1 gallon of water at 155 F for 30 mins. I use distilled water since it is an extract. Add 1/2 gal of water and add 1lb of extract. Then bring up to boil add first batch of hops. Boil 60 mins, adding hops at correct intervals. Add remainder of extract with 20 mins left to boil. (Be careful of a boil over at this addition).
First time trying a late addition extract and I am hoping it will be a lighter color than anticipated. |

Notes: - bring 5 gallons of distilled water to 150 degrees.
- steep oats for 20 minutes @ 150
- remove oats and add in the LME. Mix and then bring to boil.
- Once at boil, add DME
- add boil hops once DME is mixed in. Boil for 30 minutes
- take off heat and add corn sugar.
- chill wort down to 70 degrees.
- transfer to fermenter, pitch yeast.
- keep fermentation temperature below 70.
- add lemon drop hops when fermentation is is at high krausen
- ferment until FG is hit: ~1.015. at low temperature, it may take 7-10 days.
- transfer to bottling bucket, add priming sugar, and add lemon crystals and vanilla.
- bottle
- enjoy as soon as 1 week after bottling conditioning. |

Steep grains for 15 minutes at 160 F and sparge into brew pot. Add LME and honey. Add Nugget hops. Boils for 30 minutes. Add 0,5 oz Tettang hops. Boil 20 minutes. Add Irish Moss and boil 10 more minutes. Remove from heat and add 0.5 oz Tettang hops.
