| Notes: The Chai Spiced Amber Ale is a unique and flavorful beer that combines the rich flavors of cinnamon, vanilla, cloves, cardamom, and ginger with the sweetness and body of an amber ale. The Fuggles hops provide a subtle bitterness and earthy flavor, while the honey contributes to the sweetness and smoothness of the beer. This beer should be enjoyable to those who appreciate a spicy and complex beer with a smooth finish. |

Notes: Chimay Blue stats (from Brew Like a Monk):
- OG = 1.077
- ABV = 9%
- Apparent attenuation: 89%
- SRM = 40 = WRONG (should actually be around 22)
- IBU = 35
? Caramel 150 instead of dark candi sugar
- also replaces the Special B
? if using Caramel 150 use dextrose to increase ABV and attenuation (dry)
- ? use biscuit malt instead of melanoidin (Aromatic)
Dark malt for colour adjustment
CaraPils for head
Pils as base
Munich for biscuity-ness
- may need to boost this, as don't want to mash Aromatic (like a super Munich, very biscuity) so consider using more Munich instead e.g. 15 - 20% Munich instead
Have to mash melanoidin malt:

| Notes: Was OK - bit too tangy especially at first, and heavy - lot of yeast in bottles. Not remarkable so try different next time. possibly used larger yeast by accident. Winter 2018/19. |

Notes: Pale ale is the Briess 2-Row Pale Ale. (difficult to find)
Can't call this beer a true American Strong Ale. It is a hybrid using a DIPA grain/extract bill and swapping the HOPS to a Hallertau (a German Noble Hop) and cutting the amount considerably. I am not a hop head.
3 weeks primary (temp 68 degrees)
4 weeks secondary (temp 64 degrees)
3 weeks bottle (took extra time to carbonate since most of the fermentables are gone by this time)
Ages incredibly well!
Qualities: Very smooth, round and soft mouth feel, not thick, lightly carbonated. Fairly sweet. Doesn't have a boozy smell, but there is a definite alcohol character to it in the nose when you drink. Similar to a good bourbon ale.
Update: This one really needs to age! I bottle aged 12 of these for 8 months and it is night and day different. |
