Very strong banana flavored esters present - quite pleasant. Brew: Grain mix added to 2.5 gal hot water and brought to boil. Reduced to simmer and held for ~15 minutes. Removed grain and returned to heat. Whisked in DME and continued to stir for ~15 minutes past boiling. Poured onto 6lbs crystallized wildflower honey. Mixed thoroughly and topped up to 5.5 gal with cold water. Mixed in nutrients & aerated. Pitched yeast at 100 F (rather than let must sit overnight to cool) Nutrient Schedule: Day 0 (brew +0 hours) - 3/8tsp Day 1 (brew +8 hours) - 2/8 tsp Day 2 (brew +36 hours) - 1/8 tsp Day 4 (70% completion) - 2/8 tsp 1 tsp total of standard nutrient mix (1 to 2 ratio of fermaid K to GoFerm) Fining: After fermenting, braggot was reddish-gold and very cloudy. .75 tsp of gelatin finings were added to 1 cup cold water and allowed to sit for 2 hours. Gelatin fining mix was poured directly into primary fermentor. Bottling: Bottles were sanitized, then the bottling bucket and equipment were sanitized along with caps. 3.4oz table sugar was dissolved in 1 cup water and brought to a boil for 5 minutes. Priming syrup was added to bottling bucket and the braggot racked onto it. Bottles were filled and capped. Final volume was 4.3 gal.

Rinse grains and remove. Add 1 gallon of water plus the 1/2 dry malt extracts and bring to a boil. While boiling, add the hops per the hopping schedule. Add Irish moss after 45 minutes of boiling. In another pot add 1/2 DME to 1/2 gal water then bring to boil add to wort boil at 45 minutes Add toasted coconut (see below for prep) after 55 minutes of boiling. (5 min before flame out) Cool the wort to 75ºF and add to two gallons of cold water in primary fermenter and top off with cold water to make five gallons. Pitch yeast and aerate well. Ferment in primary for 5 days. Rack to secondary and add toasted coconut (see below for prep) and cocoa nibs. Ferment for an additional 8 days. Rack to bottling bucket and add almond extract and priming mixture. Bottle and condition in bottle for at least two weeks. Toasted Coconut: Spread .5 lbs of unsweetened coconut on to a large baking sheet and bake for 5-10 minutes at 325 degrees turning the coconut a few time. Sanitized with vodka for at least 15 minutes before adding to primary or secondary. I have used Stolichnaya chocolate coconut vodka for this recipe.

DO NOT BOIL GRAINS!!!! Remove grain bag and allow it to drain into brew pot do not squeeze. Bring water to a boil, add malt syrup while constantly stirring as to not allow it to burn on bottom of kettle. continue until it returns to boil. Add malto dextrin, add nothern brewer hops. Make sure pot does not boil over!!! Boil for 55 minutes, then add finishing hops,boil for an additional 5-10minutes. total boil time is 60-65 minutes. Cool wort to roucghly 70 degrees add yeast.
