| Notes: My brother bought some random ingredients from an online brewing supplier and gave it to me as a gift about 7 months ago. Just got around to brewing. I made some notes: The oats were rolled Quaker Oats and after the 20 minute steep they were perfectly done so we divided them between two large bowls and added butter, brown sugar and cinnamon; it was a good brunch and went well with the homebrew we were testing from previous batches. The LME was pre-hopped so we didn't add hops at the beginning of the boil. |

Notes: Used 280oz (14 imperial pints) of water for steeping. Lost a bit of crystal so down to 1 lb and 7 oz vs target if 1.5 lbs. steeped for 20 minutes but went a bit high at 175 degrees so turned off heat for last 10 minutes. Added 2 oz cascade to the boil to hit IBU target. My hops were lower alpha than target Added almost 5 lbs LME to the boil by mistake which meant that my wort concentration was a bit high. This will lower the alpha isometrization and slightly reduce bitterness.
After 2 weeks in barrel first sample was tasty but not quite like Manny’s. More like a hoppy ESB. Malt was a little strong so maybe use crystal 40. Hops were good. Strong yeast presence and lots of carbonation.
After 4 weeks there was still really good carbonation. Color was mid-brown, and while easily drunk it's not like any recognizable style - maybe part ESB, part pale ale, part something yeasty! |

Notes: Add 5.5 gal water
Add the steeping grains at 154°F for 30 minutes. Raise the temperature to 170°F for 15 minutes.
Add the extract and add the honey, stirring until dissolved. Boil for 60 minutes, following the hops schedule.
Add whirfloc at 10 min.
After the boil, chill the wort to slightly below fermentation temperature, about 62°F (17°C). Aerate the wort with pure oxygen or filtered air and pitch yeast. Ferment at 62°F (17°C) for 4 days, then allow the temperature to free rise to about 68°F (20°C). Hold there for 3 more days, then let the beer warm to wherever it wants to go. When fermentation is complete, crash the beer to 35°F (2°C), then bottle or keg the beer and carbonate to approximately 2 volumes. |
