Notes: Process:
Start the “ginger bug”: Add 2 teaspoons (10 milliliters) grated ginger (skin and all) and 2 teaspoons (10 milliliters) sugar to 1 cup (250 milliliters) of water. Stir well and leave in a warm spot, covered with cheesecloth to allow free circulation of air while keeping flies out. Add this amount of ginger and sugar every day or two and stir, until the bug starts bubbling, in 2 days to about a week.
Make the ginger beer any time after the bug becomes active. (If you wait more than a couple of days, keep feeding the bug fresh ginger and sugar every 2 days.) Boil 2 quarts (2 liters) of water. Add about 2 inches (5 centimeters) of gingerroot, grated, for a mild ginger flavor (up to 6 inches/15 centimeters for an intense ginger flavor) and 11/2 cups (375 milliliters) sugar. Boil this mixture for about 15 minutes. Cool.
Once the ginger-sugar-water mixture has cooled, strain the ginger out and add the juice of the lemons (or limes) and the strained ginger bug. (If you intend to make this process an ongoing rhythm, reserve a few tablespoons of the active bug as a starter and replenish it with additional water, grated ginger, and sugar.) Add enough water to make 1 gallon (4 liters).
Bottle in sealable bottles: Recycle plastic soda bottles with screw tops; rubber gasket “bail-top” bottles that Grolsch and some other premium beers use; sealable juice jugs; or capped beer bottles, as described in chapter 11. Leave bottles to ferment in a warm spot for about 2 weeks.
Cool before opening. When you open ginger beer, be prepared with a glass, since carbonation can be strong and force liquid rushing out of the bottle. |

Notes: 2018 winter warmer with bourbon soaked oak and cranberries.
The day before brewing, place fresh whole cranberries in freezer to freeze and break cell walls.
One brew day, start by crushing cinnamon sticks and place them in mason jar with 4 oz of oak chips, all spice, and cloves and cover with bourbon. Cover mason jar and let stand until moving to secondary.
Steep crushed grains in 2 gal of 165 degree water for 30 minuets. Sparge with 2/3 gal of 160 degree water and add extracts.
Bring to a boil and add hops and water salts according to schedule.
At flame out, add 8 oz of frozen cranberries to wort and let stand for 5 min. Cool to pitching temp and add first package of yeast.
After 3 to 5 days, when fermentation is still active, siphon to secondary fermenter. Add wood chips and spices from mason jar and second package of yeast to secondary.
Once fermentation slows siphon to car boy and allow to bulk age for 6 to 8 weeks.
If bottling: create yeast starter with cask ale yeast. Add yeast starter priming sugar and rack to bottles.
If kegging just rack to keg and carbonate as desired.

Steep grains in 1.5 gal. of 155° F water for 40 minutes. Sparge w/ half gallon of 170 deg water. Drain steeping grains by pouring sparge water over grains, but don't squeeze. Add 1 gal of water and bring to boil. Turn off heat and add Light DME and stir well to dissolve malt. Turn on heat and bring to boil and start 60 min boil and hop schedule. 5 min left in boil, add zest to muslin bag and leave in wort until dumping into the fermentor.
Cool wort with chiller to 80 F. Add sterilized water to equal 5.5 gallons. Pitch yeast.
Zest Ingredients: 2 naval oranges, 1 valencia oranges 1 red grapefruit, 2 lemons and 4 limes. |

Removed grain bag and topped kettle off with 4+ gallons of water, burner on high.
Started boil with 6 lbs DME, last pound will be late addition at 15 min.
Hops added per schedule.
PB2 added first at 10 min to fully incorporated, followed by ginger, and then cilantro.
NOTES- PB2 will clump, maybe premeasure and shake into avoid. Throw Cilantro leaves in a grain bag before dropping in kettle next time so that you don't get a stopped siphon.

Notes: 6L Sweet Cider = 672g "cane sugar".
1KG Yujacha Mix = 550g "corn sugar - dextrose".
Dissolve Yujacha and Honey with 1L boiling water. (2.5L total volume)
Boil Hops and Irish Moss for 20 minutes in 1L of water, strain and rinse with cool water. Top out to 1L total volume.
Cool and blend both Sugar mix and hop tea with room temperature cider.

Notes: Steep Belgian Wheat Grains in 2.5 gallons of water for 30 minutes. Sparge grains with warm water when finished and discard grain sack. Bring kettle to 3 gallons and increase temperature to begin boil.
As kettle reaches boiling temperature, slowly add all malt extract ensuring that it is fully dissolved and there is no clumping. Once boil begins, add .5 oz of Fuggles hops. Stir occasionally and boil for 60 minutes.
Remove wort from heat, top off kettle to 5.5 gallons, and quickly reduce wort temperature to 70 degrees. Add cooled wort to primary fermentation container along with 5 pounds of frozen raspberries that have been baked for 15 minutes at 300.
Pitch Belgian lambic blend yeast, cover, and allow to ferment for 1 week. At 1 week, pitch Wyest lactobacillus packet and allow to ferment for another week.
At two weeks, rack to secondary and allow to clear for two more weeks.
After at least four weeks of fermentation/clearing, bottle or keg the beer at high carbonation level.
Allow to age for at least three months once bottled/kegged and for up to 18 months if desired.
Try beer at different timepoints to find personal sweet spot on taste. |
