Notes: Add 5.5 gal water
Add the steeping grains at 154°F for 30 minutes. Raise the temperature to 170°F for 15 minutes.
Add the extract and add the honey, stirring until dissolved. Boil for 60 minutes, following the hops schedule.
Add whirfloc at 10 min.
After the boil, chill the wort to slightly below fermentation temperature, about 62°F (17°C). Aerate the wort with pure oxygen or filtered air and pitch yeast. Ferment at 62°F (17°C) for 4 days, then allow the temperature to free rise to about 68°F (20°C). Hold there for 3 more days, then let the beer warm to wherever it wants to go. When fermentation is complete, crash the beer to 35°F (2°C), then bottle or keg the beer and carbonate to approximately 2 volumes. |

Notes: Lalvin 71B-1122 Dry Yeast
1tsp per gallon Lalvin Fermaid-K*
Staggered Nutrients:
Day 0: After pitching the yeast, add 4.5 g of Fermaid-K and 2 g Diammonium Phosphate (DAP)
Day 1, 3, 5, 7, 8: Degas mead by gently stirring, twirling the carboy carefully, or using a wine degasser
Day 2, 4, 6: Gently stir and add 4.5 g Fermaid-K and 2 g of DAP
NOTE: When degassing and/or adding nutrients, do so very slowly to avoid foam ups reminiscent of an elementary school volcano in the science fair.

| Notes: Quick boil DME Brett beer (maltodextrin gives the Brett something to chew on over the months, and cane sugar encourages lower pH drop from the Lachancea, but can make with 100% DME, or mash some grain if you'd rather party like that). Pitch Philly Sour first, give it 2-3 days to get started dropping the pH, then pitch the Brett. Wait until Brett finishes up (3-4 months) before dry hopping, then package. |

Notes: 480 oz of apple juice
Added .9 lb of Turbinado.
Made a 2 step starter of WLP001
Brought apple juice to build and mixed in honey, brown sugar, and turbinado.
Original Instructions
This brew is an iteration of a few ciders using different grain bills (juice to honey ratios) with various yeasts.
Notes:
5lbs = 5 Gal. Apple Juice (if this is your first cider, use organic juice without potassium sorbate; it will kill the yeast and not ferment). Don't think I used maltodextrin here.
The rest of the grain bill is accurate. If a little less kick is needed, try one of the alternates below. I'm using WLP001 this time because of its tolerance for high alcohol, higher fermenting temp and because it finishes sweater (personally I prefer the dryness of the EC-1118 but then it's closer to Cyser territory).
I'm thinking ABV should be close to 10%. Also, because OG will be relatively high I'm using a starter. One could also double pitch with decent results. I've pitched one yeast pack before and still not had any problems.
Basic steps: Boil 2 gal. apple juice and add honey stirring constantly. (Honey is heavy and will sink to the bottom. It burns easily like candi syrup.) Boil juice, honey and sugar together for at least 20 minutes. Combine wort with remaining juice once temps drop to pitching levels.
HISTORIC
YEAST / OG / FG
WLP775 / 1.073 / 1.012 -5 gal. juice to 3 lbs honey
WLP005 / 1.087 / 1.030 -6 gal. juice to 6 lbs honey(4 gal. split)
EC-1118 / 1.087 / 1.011 -6 gal. juice to 6 lbs honey (2 gal. split)

Notes: One 11.5 gram packet of US-05 was used for this brew, and an apparent attenuation of 82% was achieved. The yeast was rehydrated in the wort, per the manufacturer's instructions.
A second packet of US-05 or a yeast starter would have achieved greater attenuation, but this particular brew benefits from a subtle sweetness.
No off flavors were present in the finished product.
Beer was bottled at approximately 70°F/21°C using 5 oz. of dextrose to achieve approximately 2.5 vols of carbonation. |
