| Notes: Mill the grains and mix with 3.5 gallons (13.25 L) of 163 °F (73 °C) strike water to reach an infusion mash temperature of 152 °F (67 °C). Hold at this temperature for 60 minutes. Vorlauf until your runnings are clear. Sparge the grains with 4 gallons (15 L) of 170 °F (72 °C) water until 7 gallons (26.5 L) of 1.035 SG wort is collected in your boil kettle. Boil for 60 minutes adding hops, yeast nutrient, and kettle finings according to the ingredients list. After the boil, turn off the heat and add the final hop addition and honey. Whirlpool the kettle by gently stirring with a mash paddle for 2 minutes and then let rest for an addition 13 minutes to achieve a 15-minute flameout steep. Chill the wort to 60 °F (16 °C), aerate, and pitch yeast. Ferment at 60 °F (16 °C) for the first 48 hours and then free rise up to 64 °F (18 °C) and hold at that temperature until you reach terminal gravity. Crash cool at 33 °F (1 °C) for the better part of a week and then package. Carbonate to between 2.4 and 2.6 volumes of Co2 then enjoy! |

Notes: Method:
1. Boil and cool 2 gallons of water. Pour into sanitized containers (glass gallon jugs from apple juice or cider are ideal) and refrigerate overnight.
2. Bring 3 gallons of water to a temperature between 150°F and 160°F. In a grain bag, steep the crystal rye and 120L crystal for 30 minutes. Drain well, & rinse off the grain into the pot.
3. Add 0.4 oz of Citra hops. Bring to a boil and boil for 30 minutes.
4. Remove from heat. Add the 4 lbs of DME, stir well to dissolve. Bring back to a boil for 15 minutes.
5. Add another 0.4 oz of Citra hops. Boil another 15 minutes.
6. Remove from heat. Add honey and stir well to dissolve. Leave covered for 15 minutes to allow the honey to pasteurize.
7. Cool the wort in the pot. (Cool to the point that the water from the fridge plus the wort in the pot will mix to your desired temperature. that temperature depends on the yeast you've chosen. Look up optimal temps for that yeast, from the company that makes it, online.)
8. Using a sanitized funnel for this step, pour 1 gallon of the cold water from the fridge into the sanitized fermenter. Pour the wort into the fermenter. Top off with the second gallon of water from the fridge. Mix with a long sanitized paddle.
9. Pitch a yeast starter, or simply the yeast itself. Dry yeast should be properly rehydrated first, according to manufacturer instructions.

Notes: Create a yeast starter with 1 C. orange juice, 1 tspn Yeast Nutrient, and Yeast in a mason jar. Let sit for 3-5 hours before brewing.
Crash the brew with 1/2 tspn per gallon of Potassium Sorbate after 7-10 days in fermentation, around when the OG reaches 1.020. Then, let sit for the rest of a full month to absorb the spices before racking to secondary. You can also pitch the spices in secondary instead, and rack immediately to secondary at 7 days.
On secondary, boil the the extra sugars for 15 minutes in a liter of water in a small sauce pot, siphoning off any nastiness. Pitch in, and give the mead a gentle stir for 30 seconds. This must be done *after* the Potassium Sorbate has been pitched and integrated well to crash the fermentation.
Be sparring with the orange juice. It tends to overwhelm the subtlety of the spices if too much is used, even by a half-cup. It adds a necessary acidic-sweetness to the mead to blend out the stark dryness of the spices against the earthy sweetness of the mead.
I tend to use a forest honey for a more mature vegetable sweetness, but summer bloom or clover works just as well.
Let sit on Secondary for 2-3 months. Continue to rack to desired clarity. Best if brewed in December and given at least 2 months to rest in a bottle. |
