2 Weeks fermentation
♦ SESSION NOTES: Well it was so good on it's own I'm making it again and still not dry hoping it. This is a good one for people that aren't crazy for craft beer. (Now I would add the dry hops!)
Phantom didn't have 7.75 lbs Finland Wheat so I combined with American Wheat to a total of 6.75 lbs. Not dry hopping this beer on the first run.
Recipe from Zymurgy magazine. These are the one's I'm leaving out of this batch.
•0.75oz(21 g)Amarillo,8.5% a.a.(dry hop 5 days)
•0.75oz(21 g)Cascade,5.5% a.a.(dry hop 5 days)
•0.75oz(21 g)Centennial,10% a.a.(dry hop 5 days)
•0.75oz(21 g)Chinook, 13% a.a.(dry hop 5 days)
•0.75oz(21 g)CTZ, 14% a.a.(dry hop 5 days)
♦ STANDARD BREWING NOTES:
♫Create 8 gallons sparge water. Bring to 154° strike temperature. Prime pump. Pump water through hose. Add tablespoon 5.2 pH balancer
♫Add 2 drops Fermcap before adding grain.
♫Add grain – Sparge at 154° for 90 minutes (Minimum 60) (One gallon loss during sparge process) Water burn rate: 1-1/2 gallon per hour.
♫Boil clean water for end of boil session adjustment. Adjust to 5.5 water line.
•Dark beers – Add x tablespoon Calcium Carbonate
•IPA beers – Add 5 tablespoon Gypsum for IPA
WAKE UP!!!!!!
15 minutes – Add immersion chiller
15 minutes - Add Whirlfloc
10 minutes – Add 1 teaspoon Yeast Nutrient last
♦ Check to see if fermentation tank nozzle is pointed upwards

♦ The Decoction Method
All decoction mashes start with a single infusion step where hot water is added to the mash to start the mashing process. Typical temperatures for the first step vary. Multiple step decoctions are often used. Some examples of steps include:

Notes:I have seen evidence of both Wyeast 1275 and 1968 being used by CCB, so take your pick. Dry hop for 14 days, bring temp down 10 deg each day until you reach 34 deg. The IBU's read a little high here but Wayne recommends using .5oz of both Ahtanum and Columbus for FWH. A slight variation on this would be to add Spanish Cedar to the secondary. Which ironically is neither spanish nor a cedar (South American/Mahogany). It comes as a spiral, Wayne recommends a 12-15 inch spiral for a 5gal batch.
This should be very close. The info here is taken straight from Wayne's interview posted above. Calculations are from the old hopville software.

Notes: Add 500mg potassium metabisulphite to 20 gallons water to remove chlorine/chloramine (as required).
Water treated with brewing salts to: Ca=110, Mg=18, Na=16, Cl=50, S04=279
(Basically Randy Mosher's ideal Pale Ale numbers with slightly less Sulphate).
1.5 qt/lb mash thickness. Single infusion mash at 150F for 90 mins. Mashout to 168F.
60-90 min fly sparge with ~6 pH water. Collect 14.9 gallons in the boil kettle.
Boil for 90 minutes. Lid on at flameout, start chilling immediately.
Cool wort to 66F and aerate well. Ferment at 66-68F until complete.
Add dry hops once fermentation is nearing completion (ie: below 1.015). Dry hop for 7-10 days total.
Rack to brite tank (secondary), crash chill to near freezing (if possible), add 1 tsp of unflavoured gelatin dissolved in a cup of hot distilled water per 5 gallons of beer, and let clear for 2-3 days.
Package as you would normally. I keg and carbonate on the low side (around 2 to 2.2 volumes of C02) to minimize carbonic bite and let the hop/malt flavour come through.
If you prefer to use liquid yeast, either of these is an excellent choice as they are the same clean fermenting Chico strain as US-05:

Reached 1.018 sp gr on 12/10/2020
Steamed 5 sticks of Palo Santo wood in hop bag and added to secondary on 12/14/2020. Added bourbon used to infuse pecans at same time (~1.5 cups).

Notes: Single infusion mash at 153°F for 60 minutes. Adjust mash pH with phosphoric acid (target 5.3 pH). Lauter then boil for 60 minutes. After flameout, chill to 160°F and add whirlpool hops (10 minute contact time) hop addition. Knockout. Pitch yeast starter along with. Ferment at 66°F. Add dry hop at high krausen (day 2). Rack to keg and force carbonate to 2.6 vol. (5.2 g/L) CO2.
Tasting notes:
- not a fan of the sacc trois yeast character. Too "Belgium-y". No biotransformation with yeast strain either. Very dry, slight alcohol. Dropped clear, see photo.
