Notes: Another split batch: 5 gallons with T-58 and dry-hopped with 2 oz saaz; and 5 gallons with S-05 and dry-hopped with 2 oz of cascade.
Oats are toasted.
Brew Day Complete: Somehow ended up with more beer at a higher OG than planned. Efficiency up to 87% from 73% normally. First brewday since June - went very smoothly. Was trying for a mash temp of 156F to maintain some body in what was supposed to be a very low alcohol beer. Hit 152F but with a higher OG so maybe that will be ok. Will double the dry hop to 2 oz from the original 1 oz.
Day after brewing, T-58 has kicked in, S-05 has not. Sat on all ingredients for a month or more so am a little worried about viability. However, the T-58 was the yeast with the past best-by date.
Took a Refractometer reading 11/14 and got 5.1 for the S-05 and 6.3 for the T-58. The T-58 seems to be still working a little. Using the Brewer's Friend calculator that puts them at over 6% ABV. A little stronger than I originally planned, but that's ok. The small samples I pulled make me very optimistic these will both be great and quite different from each other. I am letting them ride for a couple more days but will keg on 11/19 at the latest to be ready to tap for Thanksgiving. |

Brewed 11/6/17
Mash unmalted, flaked barley at 50'c for 20mins in 1L water. (I did 1.5L but should have done less)
Mash in 14L at 76'C Maris Otter then roasted malts then finally add premashed barley flakes, check temp and add more hot liquor to get to 67'C. (i ended with 18L mash including liquor from flaked barley
= 3L/kg mash ratio. temp at 62'c at end of hour)
mash for 60min.
Drain through bazooka screen AND mash bag for good filtration.
First runnings gravity 1.076 got 10L
Heat 30L of hot liquor to 82'C
Batch sparge 20L for 10mins (got 73'C)
Drain & measure collected wort, aiming for 30L. Do second batch sparge of a few litres if more wort is required.
Preboil gravity 1.052
Bring to boil & add single addition of hops & cocoa nibs for full 60min
OG 1.058
Not much trub, very clean brew.
First day temp was at 25'c didn't cool in beer fridge, then spent 3days on cement slab dropping to around 16'c slowly over time.

put back in beer fridge at 18'c on day 3
1.018 at 6 days
Bottled on 25/6. Added 2.0vols of priming dextrose BUT it sat there for 6hrs before bottling. Didn't get any obvious yeast activity. Tasted great, very viscous mouthfeel. rich roasted malt and good balance of bitterness. Nibs seems to have added more to the bitterness than chocolatey-ness.
Not much captured co2, compared to saison prior to bottling.. seems like more malty beers (red ale, barley wine, brown ale) don't carbonate as well, or dont have as much captured co2 before priming so end up under carbonated?
1/7/17 tasted beer-amaze! 10th brew and i got a perfect batch. Beer is only 1 week bottle conditioned and 100% drinkable. Luscious mouthfeel, quite hoppy good head... perfect. |

- With 1lb of rice hulls, the mash went very smoothly. In fact, next time I'm going to bump the 2lbs of oats to 3lbs to try and push that limit a bit.
- 1lb of victory is a shot in the dark. Not sure how this will play with the .5lb of roasted barley. 1lb feels like a lot, so if it's still overpowered by the roasted barley, maybe swap the roasted barley for crafa (something that will add color, but not a whole lot of toasted notes). Also, remember that the dark chocolate might do some lifting on the roasted side.
- If it's too thick and syrup'y, drop the C80 a bit.
- This batch, match temp was perfect. No issues. Sparge was done in ~45min. I did use a starter.
- OG: 1.076 w/ 6 gallon yield. Yikes. Recipe says 1.069 @ 5.5gal.

Notes: Should be ready fermented within 3 weeks. Secondary on Cornelius, 14 days without carbonation. 21 days carbonated to 2.5 Vol Co2. First attempt fermented to FG 1,014 in 3 weeks 10-12 degrees Celsius. The BC hop give the beer more body, and a long lasting, not to hoppy aftertaste. Next time I will use Irish Moss or Whirlfloc because it took a long time to clear it completely. Good luck:) |
