Pitch yeast at 65, maintain temp until final gravity is reached. Boil oak cubes in Port Wine and cool. Add to secondary fermenter and rack beer. Secondary fermentation at 65 for 14 days, then bottle condition 2 weeks.

Notes: Brewed 6/22/14. Hit 151 on the mash and recirculated about 1 gallon. Mash ph was 5.1 which is way lower than what I expected and what was theoretically calculated. Might splurge on a new meter. Couldn't get it to clear during vorlaugh for some reason either. Have had that issue before but dunno why. I had bad kettle (77%) and overall efficiency again and I am really not sure why. I don't think it's from sparging too quickly. It's possible that the pH meter isn't off and I am really getting low efficiency. The last few beers I have made have been low efficiency. Maybe I am not getting full conversion. I also didn't drain all of the wort off I could from the boil kettle so I had to top off with about a half gallon of water which may have played a factor. I think I had a lot of protein in the boil which played a factor. Temp dropped down to 60F so I heated it back up to 68F. 6/23/14 topped off with half a pound of corn sugar to hopefully boost the gravity up to 6%. Temp was 66F in the morning and had drifted up to 69F by evening. Temp in the morning was about 66F and had crept up to about 69F by evening so I cooled it back down to 66F. väldigt klar vört. sket i den sista trubben i bryggverket.

ingen jäsning på morgonen, väldigt klar vört. ser en bit in på botten., kl 15, full kreusen. full spätta på jäsning. 29c i temp utan uppvärmning. förhoppningsvis ingen fusel.
SÖN
Full spätta 28c. socker äts med rasande takt. nere på 1015 nu.
Blir denna bra kan detta vara en sommarjäst likt kveik, men med annan smak.
Detta blir en torr ljus saison, skall bli intressant att se vad jästen bidrar med för smak vid 28c.
Mån: 1003 FG. (Det jäste klart på tre dagar)
TIS; Vädrat ut svavel som nu verkar vara borta. tillför gelatin.
ONS: Börjar klarna ordentligt. Kallkrashar.
Flaskar på fredag prick en vecka efter bryggning.
flaskar på lördag. ställde fram i rumstemp i 4 timmar sen överförde jag till hink, sparade jäst. diskade fermonstern. sen tillbaks till fermonstern med 150g sockerlösning. väldigt enkel flaskning. blev 20 liter i flaskor. luktade svagt lager av svavlet. tror jag klarade mig från fusel.
flaskade lördag, testade en på onsdag. 75% kolsyra. riktigt bra trots så ung. ingen fusel trots 28-29 jästemp. som en lager fast med fruktigheten från jästen. när resten av sockret ätits tror jag den blir kanon, nu lite för söt, lite för låg beska.
testade fredag: smakade exakt som fruh kölch. nu vet jag hur jag gör en exakt klon av kölch. |

Notes: Late hop additions are what makes this an outstanding IPA. The hop flavor and aroma profiles up front make this a fan favorite. I literally can't keep enough on tap as it goes almost as quickly as I brew it. Cheers! |

Notes: Toasted Pale 2-row malt, fire-kilned to approximate brown/speckled color.
Kilned over a low cherrywood chip fire for approx 3 hours.
OG was about 1.060. Will check FG soon.
Tasting notes: not very "Grassy" or "seedy" like most bottled porters. Appropriately mild hops, the kilned malt really does a good job in providing a nice bitter and rounded balance. Nice, coffee-like finish, lasts over 30 seconds. |
