Notes: Mashed in with 5.5 gallons of 160 degree water into 14 lbs of maris otter.
Collected about 4.15 gallons from first runnings, all from maris otter.
Added specialty grains and 4.5 gallons of 180 degree water and let sit for 10 minutes, then collected 3.5 gallons. About 7.65 gallons going into boil.
After boil was completed I noticed I had extra wort that had dripped into the mash tun from the BIAB, a little over a gallon I think. Tested it on the refractometer and it still had plenty of sugar in it, reading at about 16 brix. So I boiled this for 20 minutes, cooled it then added to fermentor. Then dumped out some wort to get back to 5.75 gallons. This increased the gravity by about 3 or 4 tenths.
Rehydrated 3 packs of Safale 04, cooled to about 66 degrees then pitched into 54 degree wort and stirred vigorously. Had to move upstairs because temp was at very low end of fermentation range.

Split batch after 3 weeks by racking 3 gallons on 24 ounces of frozen raspberries. Racked the rest into secondary with no additions. |

Edit: Throwing in a small quantity of each hop at kegging on top of the original hop schedule will really make this thing pop and give your beer more longevity, flavor and aroma. It's a great way to compensate for the lack of efficiency a homebrew set up may have over an actual brewery. 0.5oz of each hop except CTZ would work well, or cut Cascade and add that extra half ounce with Citra, Mosaic or Simcoe. For me, it took four extra days for the beer to un-green but was well worth it! |

Notes: Create a 2-qt. (2-L) yeast starter in advance of brew day. This is a single infusion mash. Heat 3.16 gallons (12 L) strike water to 162 °F (72 °C) to stabilize the grain bed at 149 °F (65 °C) and hold for 90 minutes. Double-batch sparge with 6.62 gallons (25 L) of water to raise mash bed to 168 °F (76 °C). Toss in the first wort hop during the sparge.
Bring the wort to a boil and boil for 90 minutes, adding the hops as indicated in the ingredients list. After the 90 minute boil is complete, remove the wort from the heat and add the honey. *(I used my honey which was locust honey, I would stay away from dark late season wildflower honeys).
Quickly cool the wort to 60 °F (15.5 °C), oxygenate well, and pitch the yeast. Ferment for 10 days at 60 °F (15.5 °C). Once the primary fermentation is complete, transfer the beer to a secondary vessel. Drop the temperature to 50 °F (10 °C) and allow the beer to condition for one month. Bottle or keg as normal.
Turned out great. The photo was taken with about 2 weeks of bottle conditioning at 40F. At 8 weeks, it had cleaned up beautifully to be very clear. I can only imagine, the longer at those temps, the clearer it will become. |
