Notes: I steeped grains for 30 min. I then added the 2 lbs of Pilsen Light Dry Malt and 1 Oz Mt. Hood Hops to the boil for 60 min. My understanding is that by splitting the dry malt extract into 60 min. and 15 min. is to achieve a higher attenuation of the grains. At 30 Min. I added another 1 oz of Mt. Hood Hop pellets. At 15 min. I added the other 6 lbs of dry malt extract .Once cooled to 68F, I took the OG which was 1.061. I added the yeast and fermented at 65-67F for 9 days at which point the FG was 1.012 and fermentation appeared to be complete. I bottled with priming sugar and left at room temp for another couple of weeks before chilling it at 33-43F for "lagering". It is a tasty beer. |

Notes: To brew Kelly’s 80/- Shilling Scottish Ale, Mash at 156°F (69°C) for 60 minutes, heat to 168°F (76°C) over 10 minutes, sparge. Run off 4 gallons (15.14 L) of the first runnings and boil hard for 30 minutes. Then continue the runoff, collect 16 gallons (60.57 L), boil for 90 minutes. Transfer 12 gallons (45.42 L) to fermenter.
Primary fermentation for 14 days at 62°F (17°C).
Secondary fermentation for 14 days at 36°F (2°C). |

Notes: I have a fermzilla and pressure connectors so this is my first attempt at fermenting under pressure (allowing it to carbonate in fermenter) and then will use the pressure when it is done fermenting to push through a 1micron filter and into bottles and since it will already be carbonated, I won't be priming with sugar before bottling. I'll update notes along the way.
I also wanted it to be higher than 6% ABV (I mean, this is an IPA after all) so I added 1 LBS of corn sugar to wort after boil which made SG go from 1.061 based on original recipe to 1.069 after boil.
UPDATE 2021-02-10 17:50:00PST:
So after about 2 days of primary fermentation, a seal broke and lost all my pressure after it got up to about 15PSI. I left it alone, dry hopped two days ago.
I bought a CO2 tank and adapters so I can re-pressurize a couple days before bottle but brew shop is closed so I got impatient and bought some dry ice and threw in 1/2LBS into Fermzilla fermenter. Was able to repair the leak from what I can tell while the pressure was building back up. Was able to attach a spout to fermenter and pour some into test tube for SG reading after about 30 minutes of carbonating from dry ice. Poured into test tube pretty carbonated, SG came out to 1.006 after testing multiple times and confirming temp was at 68F. Tasted pretty good actually! I might just do the dry ice trick every brew a couple days before bottle to carbonate. I am also going to attach a water sediment filter with a 5 micron filter before bottling to clear the beer. |

Notes: 1 day ahead, create yeast starter.
Steep grains in 3 gal water and hold at 140 for 30 min. Hold at 150 for 30 min. Bring to 170, remove grains and bring to boil.
Remove from heat, add fermentables.
Return to boil add hops at schedule:
1oz Summit at 60 min.
.5oz Ekuanot at 45 min.
.5oz Ekuanot at 30 min.
.5 Columbus at 30 min.
1oz Amarillo at 5min.
Cool below 80 degrees, fill primary with 2 gallons water, transfer wort to primary, top off with water to make 5 gallons, and pitch yeast.
After fermentation stops, transfer to secondary and dry hop with 1oz Mellenium for 1 week.
