Notes: Add the enzyme in the mash, shoot for a mash temp of 143 - 146 to not denature the enzyme. The equivalent of 20mls / 100#s of grain is enough. Add the enzyme 1/3 of the way into mashing to ensure the mash isn't too hot to denature the enzyme. Stir very well and let the mash have an hour-long rest to let the enzyme do its work."
"The other option would be to add the enzyme to the kettle while lautering, then hold off on heating the kettle until all wort is in and has 30 minutes of contact with the enzyme at around 145 degrees (lower would be fine, too)."
"I know a lot of homebrewers just throw grain on top of all their mash water, so this option makes more sense to them. I preferred not to mash this way, when I was a homebrewer... Lastly, it is very important to add nutrient to the boil as well as 1/2 way through fermentation (with something like BSG's Startup) since the wort will be almost entirely glucose, there is not a lot of nutrition for the yeast. |

Instead of addind water after boil for target batch size, i'm boiling with more water for an hour instead of adding water at the end (i use tap water that need sterializing anyway...)]
At 15 min of boil, add 0.5 oz of crushed Coriander and 0.5 oz of Bitter Orange Peel
Add crushed apples on peak of first fermentation.

The mini-mash steeping time is 45 minutes at about 155 F. Drain bag and sparge. Bring wort to boiling and add malt extract. Bring back to boil and add 1 oz Strissel Spalt hops. (Note: Boil is only 30 minutes.) At 15 minutes add Coriander and bitter orange peel. At 5 minutes remaining add 0.5 oz Strissel Spalt hops. Cool down, add water for 5.5 gal, pitch yeast, and seal it up.
I added the apples on Day 3 of primary fermentation. I peeled, cored, and diced the apples before putting them in a sturdy zip lock bag and partially freezing them. The partial freezing makes the next step easier. Crush the apple chunks, let them thaw completely, and add to the wort. |

J'ai mis 700 g de dextrose et non pas 1000 g comme la recette initiale. Par contre, le taux d'alcool mesuré est 1,050 ou 5,2 %
J'ai utilisé 3 gallons d'eau de source Provigo
J'ai ensemencé avec de la levure liquide provenant d'un mout précédent.
5 septembre: mise en tourie avec ajout de 10 g de houblon fuggle (environ 20 litres de bière et 1 pouce de dépôt au fond de la cuve).
La bière a un nez et un goût fruité et est quand même un peu amère compte tenu du IBU indiqué.
EMBOUTEILLAGE; 13 sept 18: 18 litres et peu de perte (moins de 500 ml). Il s'agit d'une bière au nez et goût atypique. Le nez et floral genre pêche mure et boisé. Au goût c'est bien houblonné mais pas agressif et on ne détecte pas de traces de houblons citronnés comme dans ale et ipa américaine c'est souvent le cas. Il s'agit plutôt de houblon bien fondu dans l'ensemble qui évoque -tout comme le nez- les fruits de pêche, des notes de noix et de sous-bois. Je crois que c'est le propre du houblon Fuggle.
150 g de sucre ont été ajouté à l'embouteillage pour la refermentation. Il s'agit bien d'une ale d'inspiration anglaise.
Le taux d'alcool semble être de 5,8-6% |
