Dough-in for protein rest at 136degF. pH after 5 or so mins was exactly 5.2, so the 5gal:9#:6oz ratio of water:base:acidulated works great. This batch has no brewing salt additions.
10 mins at 136 -> 10 mins at 143 -> 20 mins at 148 -> 15 mins at 162 -> pull decoction (10 mins) [25ish min total 162 rest]

Forget about whirlfloc and fermaid
Panic and boil 6g fermaid k in 1quart water, add to wort while chilling, praise spaghetti monster that you got the fermaid k in since you didn't add any brewing salts
Transferred wort at 61 deg to active yeast cake from previous batch. Immediately transferred to fermentation chamber which is set at 54degF which should hopefully keep fermentation temp around 47 or 48 to avoid diacetyl production. |

Single infusion mash at 152°F (66.7°C) for 60 minutes. Mash out at 168°F (75.6°C). Lauter, add first wort hops, and bring to a boil. Boil 90 minutes, adding hops as indicated. Chill to 50°F (10°C), pitch yeast, and oxygenate 1 minute. Hold temperature at 50°F (10°C) for 5 days and slowly ramp to 65°F (18.3°C) over 4–6 days. Hold at 65°F (18.3°C) until fermentation is complete, then begin to slowly chill beer to the mid 40s °F (6–8°C) or colder. Rack to a keg and carbonate to 2.5 vol. (5 g/L) CO2.
Pro tip: Serve young as a hazy Kellerbier, and after a month of lagering in the keg, the beer will mature into a clear Dortmunder. Serve in a 2 L boot, preferably

| Notes: Mash at 125° F for 30 minutes, 147° F for 30 minutes, 162° F for 30 minutes. No mash out, recirculate until clear. Collect 15 gallons. Boil for 90 minutes total to eliminate DMS. Add hops as described. Chill to 50° F. Oxygenate with pure oxygen for 3 minutes at 1 L/minute and pitch decanted starter. Using Tasty’s fermentation schedule as a guide, let free rise to 52° F and rest for 4-5 days. Then raise to 58° F for 2-3 days; then raise to 62° F for 2-3 days. Once terminal gravity is reached, slowly chill to 32° F by dropping the temperature 2-3° F per day. Keg and lager for 3 months, but taste along the way because that’s just too long to wait. |
