Notes: Take the first gallon off the mash and put into pot on the stove. Then add 1 can of Libby Pumpkin mix to the pot and raise the temperature to 150 degrees, stirring constantly - remove from heat and put on a piece of wood or in the oven for 45 minutes, then after 45 minutes of keeping the pot temperature at 150 degrees, bring it to a boil on the stove and add it to your boil kettle with the rest of the wort. Wort will likely reach boil before pumpkin mixture so turn off burner and wait for pumpkin mixture, returning back to boiling after pumpkin addition. After boil, start hop additions and watch for hot break.
Add 1 teaspoon of pumpkin spice to the boil with 15 minutes left.
Chill to 70 degrees after last hop addition and transfer into fermenter after adding yeast. Swirl to kick off fermentation.
Add 1/3 teaspoon of pumpkin spice to the keg during transfer from the fermenter.

No prolonged dry hopping with this one. Ferment hot, and bottle quickly. Do a short DDH: Put in hops on day 3, lupilin powder on day 5. Bottle day 7.
Do this in the heat of summer. Try to ferment this baby at 90+ degrees.
Used Mosaic to dry hop partially to get rid of it- not a perfect match, but decent. (Also, I had them in whole hops)
Make sure when doing hop stand, cool beer down to 160, and hold it for 20 minutes at 160, then continue cooling after. |

Mash grains with ) soft water at 142 °F (61 °C) and hold for 40 minutes. Perform a decoction, pull 1/3 thick portion of the mash and bringing to a boil. Boil for 15 minutes being sure not to scorch the grain mix. Stir the decocted portion back into the main mash. The main mash should now settle at 155 °F (68 °C). Hold for a 30 minute rest. Mash out, and then sparge at 180 °F (77 °C). Cool, aerate, and pitch yeast. Ferment at room under pressure @10psi
8/28- intial taste is too sweet, may need to up hops to 4 oz saaz (2/1/1/)
