Procedures:
Step infusion mash. Add 11 quarts of 140ºF water to the crushed grain. Stir, stabilize and hold the temperature at 132ºF for 30 minutes. Add 5.5 quarts boiling water and bring up to 155ºF for about 30 minutes. Raise temperature to 167ºF, lauter and sparge with 3.5 gallons of 170ºF water. Collect about 6 gallons of runoff.
Boil: Add 60-minute hops and bring to a full, vigorous boil. Total boil time is 60 minutes. When 20 minutes remain, add the 20-minute hops. When 10 minutes remain, add the Irish Moss. When 1 minute remains, add the 1-minute hops. After a total wort boil of 60 minutes, off the heat and place the covered pot in a running cold-water bath for 30 minutes. Strain and sparge the wort into a sanitized fermenter. Bring the total volume to 5.5 gallons with additional cold water if necessary. Aerate the wort very well. Pitch the yeast when the wort is about 70ºF.
Primary Fermentation: 55º for one week
Secondary Fermentation: 35-45ºF for 3-6 weeks

Notes: SWEPA stands for Swedish Pale Ale which is not normalized but the distinct features are that its usually bitter with a somewhat high final-gravity of roughly 1020-1030. The high gravity is usually due to "high" ammounts of unfermentable sugar which is converted from starches in the infusion of 68 °C.
(aaand i just made all this up)
-We use a GrainFather if its of any importance.
-The brand of both of the malts was Viking.
-The hop list is not finished (So don't try just yet)!
-We pitched the yeast when half of the fermentor was full and did not hydrate it.
-We did not use Styrian Goldings, but "Styrian Wolf" which is not available to choose from.
-Yeast optimum temp is 18 - 22 °C (64 - 72 °F).
-This yeast may not be the optimal choise for this pilsner-ale hybrid but has good aroma and flavor characteristics.
-The protafloc should be used accordin to your packages description.
Note after brew! -Taste pretty nice, a little bitter and tasteful. |

Once boil was over I added orange peels in starsan straight into sanitized fast fermenter.
Began chilling wort to 80 degrees using recirculating arm and chiller.
Transferred wort with pump into fast ferment and aerated with o2 tank for 45 seconds.
Pitched yeast at 10:15 pm - Set temp controller to 90 degrees
Ended up with 5.6 Gallons into fermenter.
Put to rest in with heater and blow off tube.
Fermenting at 82 degrees f
Dec 31, 2019 - 9:30 am - added .5 once natural vanilla and coconut extract, 1oz citra dry hop in muslin bag after dumping first sediment ball. SG 1.015
Jan 4, 2020 - Transfered to fermonster and began cold crashing at 34.
Jan 5, 2020 - 6 pm - Added Gelatin.
OG 1.068 TO FG 1.012 - 7.35% ABV
Jan 11, 2020 - 7 PM - Transferred to keg and set to 30 PSI for next 48 hours.

Mash at 149°F (65°C) for 60 minutes or until conversion is complete. Add half of the water salt additions to the mash and the rest at sparge. Add the FWH hops during runoff, immediately after vorlauf, and allow them to steep in the hot wort as the mash is sparged.
Boil for 60 minutes. Whirlpool for 40 minutes (from start to rest) following the hops schedule.
Pitch the yeast and ferment at 67°F (19°C) for 2–3 days, then allow the temperature to rise slowly to 73°F (23°C) by the end of fermentation to ensure full attenuation. When fermentation reaches 1.5–2° Plato from terminal gravity (1.020–1.022), add the first dry-hop addition. About 4 days later, add the second dry-hop addition for another 4 days. Package at 2.6 volumes of CO2 and consume fresh.
