With a third hop schedule, we could get that a little more aromatic/higher. Recipe very informed by this blog post: https://beerandbrewing.com/make-your-best-kolsch/ Depending on initial ferment, we may want to add a honey solution to the secondary ferment, of approximately the same size. As the fermentation will be closer to done (so as the yeast has combined with/eaten the sugars), the brew should retain more sweet honey character rather than being converted.
