Notes: With thanks to Old Standby Brewing for their Sabro All Day Long! recipe which I used as a basis for this brew.
Actual mash pH=5.49 after salts etc additions.
20 minute WP to bring temp down to 82° then add WP hops. 20 minute WP with hops from 82° down to 73°. 5 minute rest and then chill and transfer to fermenter. Total of 45 minutes after flame out before chilling.
Will try overnite mash with this one as weather is still quite warm. Add dry hop addition on day 3 when primary fermentation is still active. Biotransformation will help dry the beer a bit more to reach the final gravity of 1.013
Tasting Notes: Presented quite hazy and tasted very hoppy and maybe a bit sour.
As I am not not used to an IPA I purchased some cheap Hazy IPA cans from Liquorland to compare. I was pleasantly surprised when the IPA I purchased tasted very similar and looked almost the same! Only difference was my brew tasted a lot sharper or sourer if you like. That will settle I think over a week or two. |

Notes: - Strike water 67C, target 65.5 after grains added.
- Add lactic acid to strike water before adding grains to hit pH 5.4.
- Add grains and recirculate for 45 mins or until mash is complete.
- Collect first runnings and sparge with the same amount of water you started with. Adjust sparge pH accordingly.
- Boil for 1 hour, add 20g Mosaic after 20 mins.
- After one hour, cool wort to 85C and maintain for 15 minutes with the addition of 30g each of Mosaic and Huell Melon.
- Chill down to pitching temp, transfer to fermenter and pitch yeast after aerating.
- Start ferment at 27C and gradually move towards 30-35C over a few days if possible.
- Dry hop after 2 days with 15g each Mosaic and Huell Melon
- Dry hop again after 2 more days with 10g Mosaic and 20g Huell Melon |

Notes: On brew day, mash in all the grains at 66 °C in 15 L of water. Hold this temperature for 60 minutes. . Batch sparge 10 L to ensure 25 L of wort is collected pre boil. Raise the temperature to 74 °C to mashout.
Boil the wort for 60 minutes, adding the hops at times indicated in the recipe.Stir the wort gently and allow to cool to 167 °F (75 °C) then add the whirlpool hops. Allow to stand for 15 minutes then chill to 64 °F (18 °C) and rack to the fermenter.
Oxygenate, then pitch the yeast. Start fermentation at 18 °C allowing temperature to rise naturally as fermentation progresses. Mix the dry hops and divide into two equal portions. The first portion gets added during high kräusen (Around 48 hours).
The second portion gets added into the keg before kegging. Allow each dry hop addition to be in contact with the beer for two to three days, then remove. Add .3g Campden tablet to keg.
Rack the beer, keg and force carbonate to 2.5 volumes.
