Notes: The 5 gallon Recipe was such a hit with neighbors and myself that I had to up the volume, and that is literally.
The haze wasn’t too strong and almost clarified itself in a week or so, I decided to change the yeast and small amount of wheat flour to it. Add 6 oz of white malt wheat flour. King Arthur uses red wheat, I used home ground white wheat malt.
Hops were absolutely wonderful in the small batch and they shall remain as they are.
Yeast was cultured and it looks like 3 times a standard package. Hopefully that’ll be enough.
Add 2 tsp heat nutrient.
Fermentation temp, 68 F
On day 2 of fermentation add first batch of dry hops for 4 days.
On day 6 replace with fresh batch of dry hops for 4 days or 6 days.
I’ll up grade the alpha acids later. |

Notes: Grains are limited to 8lbs for a 4g boil pot.
Steep grains: 3 gallons of 174F water(will cool quickly), stir-in all grains, remove heat and wrap with insulation for an hour or more (stir every 20mins). Iodine test for conversion. Pour warm grains into the fermentor through a BIAB bag which is over a colander to strain the grains out. Sparge with 1g of 170F water, bouncing the bag. Squeeze lightly (or bitter), let it drain. Return that wort to the boiler (clean the fermentor & sterilize). Bring that wort to a boil as usual.
sugar goes into the boil in last 10min to keep the color light.
Last 2 gallons are sterilized ICE in the fermentor (protein brake)
