Notes: This is a low-gravity (or "session") NEIPA. Recipe based on Nick Rodammer's recipe from Zymurgy (Nov/Dec 2021 issue), adapted to my system and using similar ingredients I had on hand.
Add glucoamylase to mash at start. No sparge (or minimal if you must). Direct fire to raise temp through mash rests.
No boil hops. First addition is at flameout - whirlpool for 5 minutes. Then drop temp to 180º and add remaining whirlpool hops for 25 minutes. After filtering out hops, should get about 2.75 gal into the fermenter.
Chill to 68º, add glucoamylase before yeast, aerate well, and pitch yeast. Ferment at 68º until within a few points of final gravity, then raise to 72º to finish off attenuation. Slowly lower temp to 58º, then dry hop for 2-3 days. Keg (should get 2.5 gal) and carb to around 2.5 Vol CO2. |

| Notes: Brewed 2/28/2022. Added 1 tsp calcium chloride and 15 ml lactic acid to mash water. Mashed in at 154F, held at this temp for 45 min. Infused to 160F, held 20 min. Recirculated 20 min. Used hop filter in boiler. 2 whirlfloc at 10 min. Collected 11.5 gal @ 1.046 OG. Direct pitched Windsor yeast. FG 1.014. Added 1 oz fuggles 5.2 AA dry hops to 1st 5 gal keg, and other 5 gal fermenter. |

-Ordered from Northern Brewer, to find the smoked wheat malt milled. Other options are possible if we get unmilled, but AIH only had it by the 55 lb. bag.
-The thought behind the yeast was that it was the classically German dry yeast available at Northern Brewer, and we didn't really want the fruity wheat beer flavors of SafAle WB-06.

| Notes: Brewed 10/09/21, batch sparge. Mash in with 15 L, 2 g CaCl2, 3 g gypsum, 153 F. After one hour, add 2 L 153 F water, then run off. Fill mash tun to the top with 190 L water, 3 g gypsum, 1.5 ml lactic, then run-off. Collect 26 L. Cool to 66F an pitch. Little head formation during fermentation, didn't look like a typical top-cropper. Dry hopped with 1 oz Hawthorn Goldings on 10/29. |
