Notes: The best beer that I have ever brewed. Crystal clear with a vibrant amber colour, this beer has spicy and resinous flavours and an appetizing bouquet. The bittering is very rounded; present and lingering but not at all harsh. The beer is not too alcoholic, has acceptable head retention and has a dry finish.
"Bra"... Named after the excellent song by Cymande (British funk band of the 1970's). See also my other Cymande inspired recipe "Fug". |

Notes: Inspired by a brew Kit of a similar sounding name but how I think it should have tasted. Colour, taste and smell reminiscent of autumn/fall in the countryside; cobnut/hazelnuts, hint of wood smoke, deep red/brown, warmth of alcohol. One to share with friends sat together by the fire place, or even while cooking.
Great feedback received with this beer (2023), I would say cellar temp (8-13C/46-55F) to best appreciate the flavours, but whatever works for the drinker.
Changes for 2024 = more smoked malt , say 10% as 2% isn't noticeable as intended.
I did think the malt bill was too 'busy' but actually it all adds up and works well together. |

Notes: Calienta el mosto en tu intercambiador de calor hasta que la temperatura de inoculación sea de 11°C y luego, mide la gravedad e inocula la levadura. Mi gravedad inicial fue de 1.070. Deja que la temperatura suba libremente hasta 13°C y manténla durante la fermentación. Una vez que estés a 4 puntos de gravedad específica de tu FG objetivo, que para esta cerveza es 1.015 con una gravedad final de 1.011, deja que la temperatura suba libremente hasta al menos 15.5°C, pero preferiblemente más cerca de 22°C para el resto de diacetilo. Después de 48 horas, reduce la temperatura 4 grados al día hasta llegar a 1°C. Una vez que alcances 1°C, mantenla allí durante al menos 24 horas, transfiérela al tanque brite, carbonátala a 2.5 volúmenes, trasvasa a barril y luego déjala reposar durante al menos 12 semanas. Después de 12 semanas, ¡a disfrutarla! |
