Notes: Did a cereal mash of 24 ounces rice with 5 ounces of Pilsner for 15 minutes at 160 heated up to 190 then let cool a bit before adding to mash. Had to add 2 quarts boiling water to mash to raise to 152 for 60 minute rest stirring every 15 minutes. |

Racked to secondary 7th day primary.
14th day, virtually done. 1.013 added 1.5 litre boiled and cooled water
Kegged after 28 days, 3 days were chilled to 8celcius. Kegg chilled after carbonisation (30lbs for 4 minute roll) and chilled to 3celcius for a couple days, with CO2 rehooked for a day at 20 psi.... nice! |

Notes: Pull about one-third of the mash and heat it to 162°F (72°C), rest 20 minutes. Then heat it to 203°F (95°C), rest another 20 minutes.
Meanwhile, heat the rest of the mash to 131°F (55°C) and hold until first decoction is complete.
Reunite the mash to bring it to about 149°F (65°C). Rest 40 minutes.
For the second decoction, pull about one-third of the mash and heat it to 162°F (72°C), rest 20 minutes. Then heat it to 203°F (95°) and rest 15 minutes.
Reunite the mash to bring it to about 162°F (72°C).
Heat the mash to 172°F (78°C) and mash out.
