2.5 gal Tap Water
4 Gallons Bottled Water – Note: even though this is a 5 gallon recipe, you will need extra because of the fluid loss during the boil process
1lbs Briess 2 Row
1lb Briess Caramel Vienne 20
.5lb Carahell
.5lbs Carapils
6lbs Mutons Amber Liquid Malt Extract
1oz Magnum
1oz Mosaic
1oz Simcoe
2oz Horizon
1 Safale US-05 Ale Yeast
Procedure:
Start with 2.5 gal tap water, add grains to water and heat to 165 degrees and steep grains for 45 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 6lbs LME and return wort to boil for 30 minutes
Add 1oz Magnum hops and boil for 30 minutes
Add 1oz Mosaic hops and boil for 10 minutes
Add 1oz Simcoe hops and boil for 5 minutes
Add 2oz Horizon hops and boil for 2 minutes
Cool wort to 70 degrees
Add enough bottled water to bring the specific gravity to 1.055
Add Safale US-05 Dry Ale Yeast
Fermentation:
Primary 10 days, Secondary 10 days
Kegging:
Keg and set CO2 to 20psi for 4-5 days
Reduce CO2 to 5-7psi, pour and enjoy

2.1 mout storten en 10 minuten bij 44 graden
(Ph meten na 5 minuten (beetje maischpap pakken deze terug koelen en dan meten voor een accurate waarde. Verwachte benodigdheden: 3ml om van 5.7 naar 5.4 te gaan, anders per ml toevoegen roeren en nameten)
2.2 verwarmen naar 62 graden
2.3 is 20 minuten bij 62 graden
2.4 verwarmen naar 72 graden
2.5 is 20 minuten bij 72 graden
2.6 verwarmen naar 78 graden
(tevens spoelwater voorbereiden 10 liter op 78 graden)
2.7 is 5 minuten bij 78 graden
2.8 Betadinetest uitvoeren: een eetlepel maischpap nemen en een druppel betadine toevoegen op een wit schaaltje, controleer de kleur (bruine kleur is goed, paarse kleur is langer maischen op 78 graden)
3 Spoelen
3.1 is 10 liter spoelwater voorzichtig doorgieten (let op maischbed niet verstoren en niet droog laten lopen)
3.2 SG waarde bepalen met refractometer: doel is 1.049
4 Koken
4.1 Water verwarmen tot 100 graden en 60 minuten koken
4.2 20 gram Saaz toevoegen bij 60 minuten resterend
4.3 20 gram Saaz toevoegen bij 20 minuten resterend
4.4 20 gram Saaz toevoegen bij 10 minuten resterend
4.5 Apparaat uitzetten en SG waarde bepalen met refractormeter: doel is 1.062 (Indien waardes niet goed kan er suiker toegevoegd worden om waardes te behalen. Maximaal 600 gram kristalsuiker)
5 Koelen
5.1 Koeling in stelling brengen
5.2 Terug koelen tot circa 22 graden
5.3 Gistvat + slangen ontsmetten
6 Wort aftappen
6.1 Wort aftappen in gistvat
6.2 Gist over het wort heen strooien
6.3 Gistvat afsluiten met water slot en op circa 22 graden rustig wegzetten.
7 Lageren en bottelen
7.1 na +/- 1 week lageren en nog een week laten staan
