| Notes: Rack onto cherries after primary is completed. Use 50:50 mix of dark sweet and sour cherries, as many varieties as are available. After ~1 month (or longer if needed), rack onto one oak spiral that has been soaked in bourbon. Leave until flavors develop. Add additional bourbon to taste.
